The What's For Dinner Thread - August '09(recipe index in OP)

I just found out that Chris couldn't take Alexis to school this morning. She started running fever & vomiting last night. Dr said it's another bug that's going around. He said she'll probably end up with diarrhea & may have to stay home for the rest of the week.

Chris & I are both really worried. The child seems to have no resistance to anything. Swine flu has hit down here, along with lots of other viruses. Chris doesn't usually worry, but she's been in the meetings & seen all the memos from the CDC, which has her scared about this year's flu season.

I'm so sorry Alexis is sick. I think it takes a couple years for kids' immune systems to build up. My two both came home with every cold, bug and illness for at least their first two years of school. We'll see how Caili does this year.

I did try to take a picture of Caili's new haircut this morning, but it wasn't very good. I'll try again later. She is playing at our neighbor's house right now.

Dinner is still a question mark. I want to go to the store, but both kids are running around with their friends, and I don't want them all to show up here and have me not be home.
 
I wanted to get this recipe out to you all. A few have asked about it. We had this the other night and it was really good. Hope you enjoy it.

Mexican Chicken Salad

Salad:
2 cups diced cooked chicken breast
1 (16 oz.) can red beans, rinsed, drained
1 medium green bell peper, chopped
1 cup frozen corn kernels, thawed
1/2 cup chopped green onions
tortilla chips

Dressing:
1/4 cup prepared salsa
1/4 t ground cumin
1 1/2 T lime juice
1 T canola oil
1/2 t salt

Combine all salad ingredients except chips in medium bowl.
Wisk all dressing ingredients in small bowl; toss salad with dressing.
Serve with chips.

Been to the dentist - the verdict is...... wisdom teeth. Now I have to figure out where to find the $1k it'll take to pay for it :rolleyes1

:eek: I have an irrational fear of the Dentist but im not too big on pain either.

I know its lots of $ but it will be money well spent to get some relief.

I have never heard Celebration of Life, but I am Irish and as a kid we attended a lot of funerals.

Chicken stew for DH and The Boy and morocan couscous with chicken for me !!

We are picking up the van after DH gets out of work. I will probably grab something at DM's, they are watching the kids while we get the car. DH will most likely grab fast food.

I am eating a peach scone I bought at our small local grocery...yummy! They make some tasty treats.

Laura, I have to wonder if she'll ever build up any immune system. If you count her pre-k 3 yr, this is her 4th year in school. It just worries me so much.

I just took out a blueberry bread from the oven! It smells so good. I'm also trying to get dough to rise for naan/flatbread. I turned one of my friendship bread starters into a sourdough and am trying that to make the flatbread. It might just end up being a boule tomorrow, because it's rising so slow.

With Liam, it took until we were able to manage his allergies better. I think kids with allergies are more susceptible to everything else because their bodies are spending so much time fighting things that aren't germs. That's just my theory, but I am sticking to it. I am going to be more vigilant with Caili this year, and we'll see how it goes.

Dinner ended up being bratwurst (hotdogs for the kids because I discovered the brats had eggs in them), green beans, side of pasta for the kids, and corn on the cob.

For the second night in a row, Liam complained about the menu. These are all foods he likes! I kind of lost it and told him the next time he complains, he can either go without dinner or make it himself. He said I was being mean on purpose. :confused3 If he wants mean, I could dig out some of my mom's old casserole recipes. That would be punishment for all of us though.

Oh...and I heard from Liam's allergist. He still tests positive for egg and shellfish allergies.

It's a beautiful day here in Nola! Highs in the 80's & lower humidity, very strange for August, but I'm not complaining!

Actually...it was perfect for me. :laughing: I was not overwhelmed because I was not trying to solve the Supermarket Puzzle. AKA "How To Find All the Missing (Unknown) Pieces of a Meal That Are Scattered All Over the Store". I only had to find the food, not figure out what goes together to come up with something remotely edible. :rotfl2:

I'm hoping that's what it was because I was miserable. I don't want it again.

Bethany- I don't do racoons. They are my biggest fear. I'll do anything to avoid going outside in the dark, but even then I'm not safe. The racoons around here aren't all nocturnal, but tidal. They come out at low tide because it's easier for them to find food. While I think that's pretty neat, they still scare the bajeebers out of me.

I forgot you live right near the coast. THAT would freak me out. :lmao: One of the reasons I lived in the Bronx and not the other boros was because the Bronx is the only one on the mainland. The idea of living on an island gives me the heeby jeebies.

I've never seen a raccoon. Today I was told to watch out after a good rain because the alligators will go in the drainage ditch in front of the school. Nice they tell me that NOW, when it was raining a lot LAST week. :laughing:

I didn't unfortunately, too many more coming in. :headache: and by the end of the day I was done talking to people.

I had my shrimps tonight. I made it with garlic, tomatoes and coconut milk and had it on cheese grits. I was going to eat it with rice or pasta but for some reason I just love it on grits.

Hello all! Busy, busy here still. We had applied a few weeks ago to host an intern from our church for the school year. We never heard anything , so we figured we weren't needed. Then I got an email a day ago with the move in schedule for the students for this weekend. Turns out they do need our space. And it was a case of everyone thought someone else had contacted us. So I've been ferverishly cleaning our guest room and closet for the student to move in this weekend.

I did manage to cook tonight. I saw Guy Fieri's show last week and he made "Good Karma Schwarma". It was super yummy! I'll post the recipe or link when I can get on the desktop

Sheryl--so sorry that Alexis is sick! If it makes you feel better Emma was sick the first week of school with the stomach stuff. We are seeing a lot of seasonal flu here already on top of the h1n1. I got my flu shot yesterday b/c I want to be protected from at least one of the two.

On my flu shot soap box, please get one if you can. You CAN'T get the flu from the vaccine, it's not a live vaccine. Walgreens is giving them nationwide this season, 24.99, at least in our area. With the major clinics on Oct.1 and 23. Okay, done with my PSA!

Steph~ I agree with your soap box, I'm getting my regular flu shot next week & then onto the Swine. The reports & what's going on at local hospitals is frightening. My nephew who went back to college Sunday already has received intranet updates & they already have confirmed cases. off my soap box as well.....
 
Aimee- I'm sorry about your wisdom teeth. I'm not sure if your planning on being knocked out or not, but I had mine taked out with just novacaine and laughing gas (I can't remember what it's called). It wasn't the most pleasant experience of my life, but definatly doable without being out- maybe that could save some money. Either way, you'll be more comfortable before you know it.

She told me the cost quoted included local but I would likely be more comfortable with gas or pills. She recommended the pills, said it would mostly knock me out, so I told her I'd take it. Only $35.

However, I haven't had any pain today... and I'm hoping the antibiotics take care of the existing issue at hand... so I may cancel and wait until 1)the pain returns and I can't handle it or 2)new year, when my flex spending AND dental coverage steps in. Financially I really need to push it off if I can.

Oh that poor baby! Tummy pain is scary for kids, they feel it but cannot make it go away. I think part of the problem may be that she never has a chance to build her resistance up, she gets clobbered again and is back where she started from. There is something going around though. It is a GI thing and is accompanied by muscle ache and just plain pain. Welby was out yesterday and my neighbor was down all weekend.

I agree with you on the allergies, Those little bodies are working overtime! I do hope he outgrows the egg allergy quickly! Is is clear on dairy?

DInner last night was leftover roast beef simmered in gravy, potatoes fried with onions and garlic, sugar peas adn a tomato and onion salad. Buddy has been helping a friend chop tobacco so he is getting in after dark. He would have a sandwich but I hate that when I can make him a hot meal. He may get his wish tonight though, I am cleaning the basement while Nola sleeps ands working on closets when she is awake. My house is :scared1::eek:. Why in Earth did I think this was a good idea!?!
