The What's For Dinner Thread - August '09(recipe index in OP)

The recipe got :thumbsup2:thumbsup2:thumbsup2:thumbsup2 so here it is

Grands Taco melt

1 lb ground beef cooked and drained
1 pkg taco seasoning
2/3 c water
1 1/2 c salsa
1 can pillsbury grands biscuit
1 c shredded montrey jack cheese or mexican cheese blend
1 c sour cream

heat oven to 375
in medium saucepan cook taco seasoning, water and 1/2 c of salsa with the cooked browned ground beef until thickened.

press each biscuit into 6 inch rounds. fill each round with taco mixture and 1 tblsp of cheese. fold dough over and press to seal. place on greased cookie sheet.
bake 9 to 14 minutes or until golden. Serve with remaining salsa and sour cream.

I didn't do the individual things. I put the ground meat mixture in a greased casserole dish topped with cheese and put flattened crescent roll dough over top and sprayed with pam. Maybe the pam was not needed but I thought it would help with the browning part.

I like the way you nanatized this! Every time I try to do the "turnover" thing, it makes a huge mess as filling oozes everywhere! I think I'll try this sometime next week!

Boy do I hear you. I was just to tired to deal with the little devils. Besides this was just soo much easier. Turnovers sometime just don't turn over for me:confused3. Maybe if you do a calzone kind of thing that might work too.

Well, today was MUCH better than yesterday. Turns out the guy in front of me in carpool today ended up with a dead battery too. What luck. Luckily, DH was with us today and he helped the guy out. The guy kept apologizing to us, and I tried to tell him, that that was me yesterday. No worries. I also had a mom of one of the boys in Emma's class call today and we worked out some carpooling. I am so thankful not to have to drive back and forth everyday now!

Oh, and I'm really excited. I booked a Wine seminar at F&W this afternoon, Moët & Chandon, Champagne, France, Seth Box. Should be fun for me and my girlfriends to learn a little and taste a little!:banana:
 
He just came into my room a few minutes ago with a fever. I'm not sure what is going on with him. Yesterday he threw up in the farmer's market parking lot, but he said that was because he felt too hot and dehydrated. After a cool shower and some water, he was fine. Now he has a fever. :confused3

My DN ran a slight fever after getting dehydrated at WDW in June.

Kathy -- I hope I'm wrong, but I have a feeling it is going to be a bad year for storms coming up the East Coast. The water is a lot warmer than usual. I'm glad Kyle had a good time, and I hope he makes the team.

I get the feeling we are all in for some rough weather this Fall and Winter after the weird Summer weather.


I thought I quoted more but I am so tired. I hate this week! Training last 7 to 8 hours a day but I end up having to work around 11 hours just trying to keep up with everything. I don't have to teach anything thankfully, I am responsible for getting breakfast and snacks, purchasing them and set up. I make up trays and try to make everything look nice. I am so tired that tomorrow I am throwing all the breakfast foods we have left on the table and telling everyone to have at it. :rotfl:

I also have to try and keep up with all of my office work so I don't have to work on the weekend. Luckily this year the voice mails and e-mails have been a lot less then usual.


Dinner tonight was spaghetti and meatballs.

We will need to make sure we meet up, gotta make it 3 in a row. We booked a tequila tasting for 3:00 on Saturday, so hopefully we can meet up before or after!

Seared Scallops with Warm Tuscan Beans. The recipe was in the March issue of Cooking Light. I used arugula because that's all I had. It was really delicious, one that I will do again.

Tonight was kick off for our fall stuff and we had kids coming out our ears! For the school age kids, I didn't want them to have to do anything structured on the first week of school so we just played crazy games. Their new favorite is "sardines" which none of them had played. I think we may have to make it a regular event! It wears them down :thumbsup2

Liam had blood drawn today to see if his egg allergy has improved. We'll find out about that next week. He just came into my room a few minutes ago with a fever. Dr wants to hold off longer for physical therapy until after my next visit which isn't until November. I kinda bummed about that, but he did say I could walk & swim.

I know! We are not on the coast and that is a blessing weatherwise. I worry about the Carolina coast this year, the storms seem to be hugging their shoreline and then scooting up the Atlantic seaboard.

Laura, I know that La Nina is supposed to give us a warmer winter and fewer storms but I keep wondering if we are going to pay the price of this nasty summer with an icy winter.

Dinner was stuffed peppers, salad and a baked potato. I was not home so all Buddy found was the stuffed peppers. He missed the salad so he made his own version and never even thought about a starch.

Marisa and I are going to try once again to get to a movie. Buddy will keep Kady. Leftovers are in order. Unless she talks him into taking her out for something :woohoo:
 
Kyle's interview was just "OK". He said they had 50 applicants for one position and it was pretty clear to him they were looking for someone with some "office" experience which he doesn't have. He will probably join the masses applying all over the Baton Rouge area.
 
Lauren, like Nancy said it seems like Thomas was just born and to quick for him to start with teeth. How old is he now? How was he with the teething, any issues?

Kathy, keeping Kyle in my prayers. I am sure he will give it his all walking on, I wish him well.

Morning all, it's an amazing day here. The weather is perfect sunny, cool with a nice breeze. I don't do hot, so I'm really enjoying today. I also need to cut the grass so it's perfect. I should probablly tidy up some things in the yard so they don't get blown around this weekend.

Since you ladies are talking about chilly winters- I just ordered the kiddo's winter jacket from LLBean, it is there daily markdown today if any of you are interested. It's the same jacket she had last year, just a size up.

Sheryl- I saw that recipe and thought they looked great, your picture looks just as good as the magazines. I think we'll try it with baby spinach.

Nancy- I've given up trying to predict what the weather will be like, last winter was pretty mild so it almost feels like we're due.

Bethany- It sounds like your school year is already much better than last year, I hope that stays the way. You've earned it.

Vickie- Welcome back. So far everything you've told us your "Na-na" used to say makes perfect sense, besides, it worked out well for the boy. I always think the simple parties are the most fun. Some parents go all out planning something big, and all the kids want to do is have fun running around. Mine just turned 9 in July and it still hasn't set in.

Laura- I hope Liam does well with his allergy tests, I can't imagine a life without eggs.

I'm off to Trader Joe's, I haven't been there since the beginning of July and I need to stock up. I'll find something for dinner there. Have a great day ladies!
 
Good early morning! I'm trying to get myself in the habit of getting up early! It's not fun, but I do find I have some time to do some recreational reading if I get up even half an hour before the kids do.

We are leaving for my dad's house as soon as Alan gets home from work tonight. Between 7:30 and 8:00 tonight. It will mean a late night of traveling, but hopefully, the kids will sleep some of the way. Tomorrow morning, the theater company is performing a "reading" of a play that my dad has written, called "Nell Gwynn". He's so excited. He's been working on it for years, and this year they are testing it in front of an audience. I am so happy he's found something to help him with the loneliness he's felt since mom died.

Anyway, because of the late night, I'm not sure what we'll have for dinner. I want to have something fast ready so we don't have to stop on our way out of town. So, it will probably either be macaroni and cheese, or soup. I do have some peppers and some olives and pepperoni, so maybe I'll make a fast macaroni and cheese pizza. We'll see.

Well, the one boy in Emma's class threw a fit and wouldn't get in my car. His mom was all out wrestling with him and couldn't get him in. So, she ended up taking the kids this morning. I felt so bad for her b/c she was not at all prepared to schlep the kids to school. I'll try again tomorrow.

Kathy--sending good vibes for Kyle and his job search if the apt. job doesn't pan out.

Robin, thanks for the LL Bean tip. I just went and spent $115 but I did find a code for free shipping. What deals...I got Emma a snow suit and matching hat, a pair of shoes. I got Luke the daily special wintercoat (in 2 sizes I will return one), and a barn coat. I am so excited I can not wait for the order to arrive now! :cool1: Thanks again.

Quick and easy! I have one more piece of the chicken left, and am tentatively planning a salad with it, with more greens, bacon, tomatoes, sweet peppers, etc. for our dinner this evening.

I am not sure how Liam is feeling today, but he must have gotten his new computer because I got my first ever email from him this morning. It is so cute!
