The What's For Dinner Thread - August '09(recipe index in OP)

Hey y'all, I'm having to do a quick check in. DH is working from home ( the van is the shop). He's hovering for me to give him the computer, so I had to read through very quickly.

I'm sorry that Liam & Jacob are sick!

Glynis, I'm glad Timothy is doing well!

I'm sorry that's about all I was able to grasp.

Sorry I didn't get back here yesterday evening. I waited forever in the dr's office.
But I did get good news!! I can drive WITHOUT that darned neck collar!! Yippee, woohoo! I haven't driven in over 6 weeks! FREEDOM!!! In 2 weeks I'll start occupational therapy on my hand. Dr wants to hold off longer for physical therapy until after my next visit which isn't until November. I kinda bummed about that, but he did say I could walk & swim.

I'll try to BBL!:grouphug:

Hey all! Another crazy day here. The best part was my car battery dying in the carpool line today. Good times. I was so embaressed. But a nice guy pushed me out of line to a parking lot, and the DH came jumped my car. Ugh! Ended up making for a crazy afternoon. We had spaghetti for dinner; not exciting, but easy

:headache: I hate when that happens! So embarassing.

Now, Timothy.

:rotfl: How cute is he?!

Liam had blood drawn today to see if his egg allergy has improved. We'll find out about that next week. He just came into my room a few minutes ago with a fever. I'm not sure what is going on with him. Yesterday he threw up in the farmer's market parking lot, but he said that was because he felt too hot and dehydrated. After a cool shower and some water, he was fine. Now he has a fever. :confused3

Poor guy :sad1: I hope the egg allergy has improved; when will you find out results?

I got the shots this morning and they weren't too bad. The medication is very thick so you have to use a lot of pressure to get it out and it burns but I'll live. No reaction, which I figured.

I have church tonight - the youth are having a back to school party, and grilling hamburgers/hot dogs, so I'll snag some food there before my classes start.

Ladies - I'm not liking the computer models for Danny, it's way too close to some of you. I need to start praying NOW!:guilty:

Kathy -- Good luck to Kyle! Did he have fun hanging out with the baseball players? Is he trying out for the team?

Yes, he had a good time and met quite a few of the players. He's said all along he's going to walk-on so we'll see!

I hope Liam is feeling better and it's not the flu.

Hi Everyone!

Sorry I have been MIA for so long!

We've missed you. Look forward to having you back in the swing of things!

Jacob woke up with a fever today, too! He says his head hurts which is pretty telling, for him. I'm expecting a barf a thon soon.

Oh no, hope he's feeling better this afternoon.

That's wonderful news, I'm so happy for you!!!!!!:thumbsup2

That is exactly what is wrong with Liam, but it didn't start until this afternoon. I hope you are wrong about the barf a thon. Liam says his stomach is okay.

Sheryl -- I'm glad you were cleared to drive!

Marisa -- Congratulations on completing the school shopping. The only thing I've bought so far is the kids' sneakers. Caili needs everything this year too. Liam only needs pants.

Aimee -- I'm glad you didn't react to the medication. Now I'm hoping it gives you some relief! The allergist said she would call next week about Liam's test results. If it comes back negative, they will do a food challenge in the office, and if that goes well, he will be all clear.

Kathy -- I hope I'm wrong, but I have a feeling it is going to be a bad year for storms coming up the East Coast. The water is a lot warmer than usual. I'm glad Kyle had a good time, and I hope he makes the team.

I've read thru again on my phone & will try to peck away here to comment.

Ann, POPalicious! I'll bet he is! I'm praying something comes through on the van!

Glynis, I love Timothy's parade wave! Alexis Learned it long ago, but we call it the Princess wave. He is going to be a real "chick magnet" very soon!

Kat, good Luck to Kyle ! It's great that he has an interview.

Aimee, Those injections do not sound like fun! I'm glad you didn't think it was too awful. How often will you have to have them? I hope it's not a daily thing!

Marisa, glad to "see" you around! KADY is just growing up too quickly.

Stephanie, sorry that happened wit the car! Stuff like that sure can make for a rotten day.

Dinner tonight will be scallops but I haven't decided how or what to have with them.

Hey all! Another crazy day here. The best part was my car battery dying in the carpool line today.

I hit an old man with my car today !!

Well, when I say hit I mean nudged,he just walk out right in front but you know I saw it coming.I just knew he was going to do it :confused3 so I had slowed right down.

Silly old bugger.

DH is on call this whole week again.

DH did on call for a while and it was a pain....still wont have to worry about that soon.

He was told last week after a company reshuffle his job is gone !! :sad1:

Vickie, I am so sorry to hear this ...now I feel stupid for complaining, things could certainly be worse.

Aimee, I hate shots. I hope they help.

Laura & Glynis, I hope your boys are better soon.

Vickie, no more hitting people. ;)

Luke wanted to surprise my parents...so we did a quick drop in for lunch.
I just picked up some McD. It is hot as heck here.

Lauren- We'll be there for F&WF. Looks like cruising the food booths on Saturday 10/17. Maybe one cocktail at BWI since we have dinner at Boma that night at 7:55. Depending on how that goes, I'm trying to get to Brenda's thing too. That might be a little ambitious though!

Just need the time and place to meet! :thumbsup2

Ever since I started reading Beverly Lewis books I've been interested in some of the foods she writes about.

I LOVE her books. I agree I love the Amish way. I am so glad Lily is feeling better.

A real quick fly by my friends. I have to pick Ethan up from school here in 10 minutes. By the way he is doing great. Ever since he talked to Dad everything is ok. He bounds out of the house all smiles and ready to go. PTL!!

Vickie ~ Hey stranger. Good to see you.

Lori ~ hi there.

Gretchen ~ my dear dear friend. I have been where you are and my heart knows your pain. Please take care of you in this process.

Glynis ~ I love the story of Timothy. What a cutie!!

Lauren ~ I am so glad things are starting to get back to normal for you.

Ann ~ My Doug has call weeks and yes they are the pits but I always look at the paycheck and LOVE it!! :lmao:

Kathy ~ Good luck to Kyle on the job.

WFDT ~ BLT's summer green salad and chips. Easy peasy :cool1:

Well ladies I really need to go. Love to you all and hugs to everyone.

Vickie, I am sorry about your DH's job. I hope soemthing else turns up soon.

Gretchen, you are in my thoughts.

Glynis and Laura, ugh....I have a headache now just reading about the sick boys. I hope everyone is better soon and there are no barf-a-thons.

Sheryl, great news on the collar! Continue to take it easy though, don't overextend yourself.

I am forgetting some stuff...I have a mind like a sieve!

Can you do Bellevue Lounge at 6:00 on the 17th? You really need to try and do Brenda's bash too!!!!!!! We cannot be in WDW on the same day and not hook up!!!:cool1:

Jacob is feeling 100% better now. He slept most of the day, and woke up with no fever, and no headache! Hooray!!!

We are going to grill burgers tonight. Easy and yummy. We'll probably also grill some zucchini as our garden has overproduced that vegetable.

Vickie -- I'm sorry about your husband's job.

Ann -- That is sweet of Luke to want to surprise your parents.

Glynis -- I'm glad Jacob is better! I hope Liam recovers as quickly. He did come down and eat dinner, so that is a good sign.

My pasta was good. It had tomatoes, corn, onion, garlic, bacon, sweet peppers and avocado in it.

Tonight I'm making a new recipe so I'll let you know how it is. It is a taco melt that I am nanatizing since I don't have the right kind of biscuit dough and I don't want to go out in the rain.

Vickie Layoff's are crappy. Sorry to hear about the car issue. I hope everything turns out ok.

Kathy Hitting a police officer is not a good idea.

Laura Glynis I hope your boys get better fast.

It was Alex's first day today. He was poking around this morning and missed his bus. Good thing his dad was off today and could drive him

Ann - The Boy thinks POP is POPtastic !! :)

Hey....thank you all for The Boy's birthday wishes.

He really did have a good one.

He wanted an Xbox.

We told him ok but that would be all he would get ( didnt quite work out like that but hey ho..:rolleyes1 ) and no party this year.

Kids parties are so expensive.

Any ways, as my Na -Na used to say " God loves a tryer " so he asked last week if he could get his friends together for a wee kick about instead.

So after much phoning and running around I got 12 of them together at the local indoor pitches on Sunday.

They played football for an hour and a half,I took juice and chips and some candy and it cost me all in $20 !!

And goin by the laughs and fun they had and big hugs and kisses I got at bed time  it was the best $20 I've ever spent !!

We had a small family party at home yesterday which was really nice.

I will post pic's on FB tomorrow.

The Boy also went back to school on Monday but I'll tell youse about that later because Im ready to hit the sack.

Nighty,night...xx

The reshuffle has been going on for the last 2 years and DH said that after the initial shock he felt as if a huge weight had been lifted.

He has at least 3 months notice So he has some time to look.

He is very good at his job, well respected and liked so we are hoping that he gets sorted out ok but times are tough over here.

Good news is the holiday is all paid for we are gonnae hit WDW big time !!

DH has steam to let off....:cool2:

Now...really...bed !!

The recipe got :thumbsup2:thumbsup2:thumbsup2:thumbsup2 so here it is

Grands Taco melt

1 lb ground beef cooked and drained
1 pkg taco seasoning
2/3 c water
1 1/2 c salsa
1 can pillsbury grands biscuit
1 c shredded montrey jack cheese or mexican cheese blend
1 c sour cream

heat oven to 375
in medium saucepan cook taco seasoning, water and 1/2 c of salsa with the cooked browned ground beef until thickened.

press each biscuit into 6 inch rounds. fill each round with taco mixture and 1 tblsp of cheese. fold dough over and press to seal. place on greased cookie sheet.
bake 9 to 14 minutes or until golden. Serve with remaining salsa and sour cream.

I didn't do the individual things. I put the ground meat mixture in a greased casserole dish topped with cheese and put flattened crescent roll dough over top and sprayed with pam. Maybe the pam was not needed but I thought it would help with the browning part.
