The What's For Dinner Thread - August '09(recipe index in OP)

Hey guys, haven't read back but wanted to say we had a great, very wet day in Baton Rouge. Had rain all the way there and back and the entire time we were there but it didn't bother any of us. We took Kyle and one of his roomies out to lunch and had a new(for us) dish called "Angels on Horseback". It's a jumbo shrimp stuffed with an oyster, wrapped in bacon and lightly battered and fried....oh...my...word...AMAZING!!!!! We spent the rest of the time touring the campus and being shown around town. Kyle is actually coming back to NOLA tomorrow to get some reference letters for his job application so I'll be cooking for him tomorrow too!!!:goodvibes
 
Kathy You almost had me with the shrimp and bacon but lost me with the oyster.:rotfl: I am glad you and Johnny had a great day. I hope Kyle gets that job.
 
Sheryl -- I think the start of 1st grade is difficult for some kids socially because they tend to partner up. We didn't have that problem with Caili because she already had a friend from the neighborhood, but one little girl was very upset because she didn't have a bus partner. The seats on the bus seat three. It didn't take too long for the partnered up girls to figure out that they could let the other girl sit with them. I hope things get better soon for Alexis.

The friend thing is not good. Kady is pretty easygoing and likes a lot of girls (and boys but shhhhhhhhh, she seldom admits that). There were about 4 little girls in K that played together. come first grade Kady was separated from one, they were way too chummy in class. The little girl was horrible if anyone of Kady's new friends tried o play with them. Same thing in second grade. By now Miranda's class is seated in a different lunch room. I guess the teachers noticed because this happened in the middle of first grade. Now Kady likes to be nice and was feeling badly that Miranda was like that, and woudl tell Marisa. finally towards the end of last year kady was able to tell Miranda that she played with everyone who was nice, if miranda did not like that she needed to play alone. Girls are tough at taht age, they do not understand that it is possible to have a lot of friends.

We call them the Shovan's Flinstone Feet!

I know part of the problem is Alexis goes to school in my neighborhood but lives in another. I don't have any girls her age (that I know of) near my house. Chris is going to try to find out, if there is a girl scout troop at the school. That worked for Angelina, we changed her school in 2nd grade, but joining Brownies helped out a lot.

How about arranging a play date with one of the kids. I would ask the teacher if there are any girls that she has been paired up with in class, they would already have a common bond that they do not even realize that they have. Also, is Alexis starting religious education or is this in school? If she had a separate class she might have one or two girls in common wiht her class. This helped Kady.

Sheryl - the whole "friend" thing is enough to drive a person crazy! When my twins started kindergarten, they each made separate friends and things were really good. The next year, they were in a class with a girl from their kindergarten class who had been a "best" friend to Leslie in kindergarten. At the beginning of first grade, she ignored Leslie, and started hanging around with Mary. It really bothered Leslie. I talked to the teacher about it, and she got to the bottom of it. Apparently, this little girl figured that since she had been friends with Leslie for one year, she had to be friends with Mary the next year. It didn't occur to her that she could be friends with both of them at the same time.

Still here at work! We had severe TS and tornado warnings so I stayed here and worked on a bunch of stuff. Of course now that I am ready to leave it starts to rain. :headache: The warning were until 7:45 for the tornado and 8:30 for the TS's.
 


Marilyn, sorry you got caught in the rain. It was "Holy Rain!" her too. Welby called to tell us that her friend was in Winsted and a tornado hit. He said the ugly weather was heading our way. Funny thing, Marisa and I were on RT 91. No rain, blue sky through the clouds. We got to RT 20 and could see the line of storms clearly delineated. Weird! As soon as we got off the highway we were in "rain country". No tornados but the rain was bad!
 
We had round one of storms & lost power for a few hours.

Lily's vet gave her a shot of cortisone, when she moved her neck to one side she was in horrible pain. I have to give her steroids for 5 days & then take her back for a recheck. She needs to continue with no activity through the weekend.
The ER vet just called & said he didn't understand she has no pain Tuesday or Wednesday night. He thinks I should continue with no activity & then seek out a neurologist. I just don't know.

Greg traveled safely to Maryland, I should hear from him tonight with another update on Leona.

Dinner was left overs...some cold because of the power outage. Just gross!
 
Praying for my dear friends dealing with the weather. Y'all got me through last year's evacuation and I'm eternally grateful. So I'm keeping y'all all in my thoughts and prayers and please stay safe.:grouphug: I'm especially worried about you Maria, since you're dealing with poor sweet Lily and your Greg is away.:hug:

I think this is something girls figure out in first grade. They can be friends with more than one girl at a time.

The barbecue tonight was great. My neighbor went fishing and caught a striped bass this morning, so he grilled it up for us tonight. It was so delicious! I think I could have eaten the whole fish! :laughing: The guacamole was a big hit, Aimee. I used four avocados, and there were only six of us eating it, and I came home with an empty dish. The sangria pitcher was also empty.
 
Finally home and fed. Got dinner at KFC, I wanted fried chicken tonight. We went to leave the office shortly after my last post and it was POURING!!!! Waited until it slowed down then headed to the KFC. It stopped long enough for me to get there and almost home before it started again. Stopped at the store and got a lottery ticket on my way home too.
 
I can understand that. I never used to believe that my IBS was related to stress, even though the dr told me it did. But I've had a couple of incidents when I've gotten extremely upset & five minutes later I'm doubled over in pain. I believe it now. I think you are handling this situation very well. I'll continue to pray them to get this straight! :hug::flower3:

It's funny how that happens, isn't it? When church was having all those "issues" a year or so ago, I would sit in meetings (and couldn't speak my mind, of course) and get so upset that I would double over in pain just sitting there! It's crazy!

I agree. Perhaps a call to the insurance company to intervene from the Dr advising that if the meds are delayed much longer there is the distinct possibility of a hospital stay.



I am really sorry about that, everyone needs an atttack dog that gets let out once in a while. I am that one in my family...if all else fails I get the call.

The GI has let them know we are nearing that point. I think the issue is that the RX side of the ins company doesn't give a rats about the medical billing potential - you know?

My mom was always that attack dog - though she typically went overboard in her handling of things - but she's in FL, and works someplace that doesn't allow for calls during business hours. I've thought about having her call :rolleyes1

Sorry everyone I'm having a hard time keeping up with everyone. I'm not even back to full work yet and I am having a hard time adjusting. My back and hip are making me feel like I'm a 100 years old I can't image what I'm going to feel like being back to work at my reg. schedule sorry for going on. :hug: to everyone who needs them

It's good you can ease into things. When do you have to go back FT, or can you work off your own schedule and see how you feel?

I'm glad you liked the bacon addition! I agree with the friend thing being worked out in 1st grade or so. Even then they sometimes struggle to play with more than 1 other girl. Sadly, just another painful developmental stage we all have to endure. :sad1:


We ran errands all day - I found Rose Regale at Sams for $17 for the large bottle. It's $22 at World Market so it saved a few dollars. Where's the cheapest y'all have found it? Costco has not carried it in my area, but thankfully Sams did. I want to hold it until momma comes in a few weeks but it's calling my name :rolleyes1

Tonight we had IHOP - B1G1 free coupon made it a cheap night out, and heaven knows that place is never crowded on a Friday night :laughing:
 
It was a little weird out there tonight. At one point I had to be careful to not run over the curb, I was trying to see these weird, low clouds. And there was lightening that seemed to come out of the clouds, across the sky in an upwards pattern, rather than downward.

Okay ladies, Buddy has not stopped teasing us for the storm thing. "It's just a little rainstorm!" I think it is a good thing I have lot of room in my freezer.....he is close to being freezer fodder! I told him it would be in his best interest to find something to do today..................

We were supposed to go to a family picnic today but it is canceled, rain is coming and my niece cannot get everyone into her apartment. Buddy has a stag this evening. Dinner is :confused3, I may join Debbie at a club, one of her friends is in a duo band (I don't even know what that is ;)) and she asked if I would go with her, but that was when we were skedaddling out early from the picnic :rotfl:

I know I am missing alot, I'm sorry I have a mind that is mush lately! Have a great day all!

Would you share your recipe?

Well, you know how my recipes are :rolleyes1 but I'll post how I made it yesterday. I always taste my guacamole several times...I'll start with one lime, but add more if necessary, start with a little salt, add more if it needs it, etc.

Aimee -- I think you need to get your mom on the case!

I forgot to add -- Kathy, it must be so nice getting to spend so much time with Kyle. I hope that is making both of your transitions easier.

The kids and I are spending the weekend with Becky and John. I'm going to the fish market shortly to procure whatever looks the best. Our tentative plan is fish tacos today and fra diavlo tomorrow.
 
I LOVE oysters! We don't eat them in the summer months though.

Laura is coming over this weekend, and I think we are having fish both nights. The menus we discussed last night were fish tacos one night and seafood fra diavolo the other night.

Guacamole (8/21 version :laughing:)

4 ripe avocados
1 medium red onion, diced
2 small seranno chile peppers, seeded and chopped small (I usually use jalapeno, but the store was out yesterday)
1 handful cilantro, finely chopped
1 medium tomato, seeded and diced
2 slices of bacon, cooked and crumbled
juice of two limes
salt

Coarsely mash three of the avocados in a glass or ceramic bowl and dice the fourth. Add the diced avocado and all of the other ingredients except the lime and salt. Gently combine. Add half of the lime juice and sprinkle the guacamole with salt. Combine. Taste for seasoning. Add the additional lime juice, if desired, and more salt, if needed. You can also add more cilantro if the flavor is not bright enough or more chile pepper or a dash of hot sauce, if it is not spicy enough.

Serve immediately or cover the guacamole with plastic wrap, pressing the wrap directly on the surface of the guacamole to prevent the avocado from turning brown. Cover the dish with a tight fitting lid and refrigerate until needed. I usually don't make my guacamole more than an hour before I am serving it.

We are first going to the farmers market. I love that place. it makes me feel good looking at all the fresh fruit and veggies, oh the possiblities!:laughing: I wish my garden did better this year. My tomatoes, zucchini cuc's were/are a big disappointment. I still haven't had signs on my canalope or watermelon :sad2:

I hope to get back early to do some more housework. I hope to grill fish tonight. We will see if the weather cooperates

Boys and shopping are almost as bad as shopping with girls!

WE are trying to work here too and I really am not feeling it! Buddy is taping off all of the wood in Kady's room and boy is there a lot! I was putzing down in the dungeon.....I mean the cellar. So far a big trip to the dump with junk and for the Too good to throw away pile. I am trying to get myself back down there but so far not so fast! :lmao:

Last night we had brutal thunder & lightening storms. Again no power 11:30pm to 6:00 this morning. Hot as he** & Lily was trembling with the storm so I stayed up with her so she would stay calm & rest her body.
