Got my grocery shopping done today. DH watched Luke and I took Emma with me. Don''t you know DH got called in for work while I was out shopping. I scored some great deals at Walgreens...I save $32 with sales and coupons :goodvibes ...and only ended up spending $37. I was so proud of myself. My big deal was a jumbo pack of pampers and a box of wipes for only $6.22...see that little things that make this mom happy!!!

When DH gets home we are going to take the kids for a ride, and pick up a brickoven pizza at a local grocery store. It is better than some of the pizza parlors around here.

Aimee, the shrimp were good. I did play with it a little. I had more shrimp so I doubled the recipe. I did not double the salt, or cayenne pepper and I added a tsp of lemon pepper to it. I thought the pumpkin spice worked in place of the allspice okay. They did have a nice kick.

Hi Everyone,

Gretchen -- Cancer is so cruel. :hug: Your story about Hailey made me smile.

Kimmar -- My mom didn't make the fritters today. She grated the zucchini then steamed it, squeezed the liquid out then put in a pie plate. To that she added salt, pepper, parmesan cheese, two eggs and chopped up basil. She baked it at 375 for 45 minutes. My dad and BIL loved it.

Dinner today was really good. Becky took pictures. We had grilled striped bass that was served over grilled tomatoes and fresh greens that were tossed in a balsamic dressing. Becky made a pesto sauce for the fish. YUM! My mom also made eggplant sticks and the zucchini dish.
 


Gretchen - I forgot to mention that picturing Hailey next to you made me chuckle, I just adore that girl.:lovestruc

Dinner was scallop scampi over Angel Hair with a green salad. I bought gorgeous sea scallops yesterday so I seared them off in olive oil, added thm to a scampi sauce.

I don't have good measurements but
1 pound sea scallops
1/4 large onion minced
2 lemons, zested and juiced
3T minced garlic
pinch chili flakes
chopped parsley

1 cup white wine
1/2 cup chicken stock
1 T corn starch
salt and pepper

olive oil
butter

Saute onion, garlic in olive oil and butter, add chili pepper, S&P and cook.
add white wine and lemon juice and zest. reduce

add chicken stock to make enough sauce for pasta and simmer. thicken with corn starch and chicken stock if desired

Sear scallops on both sides and add the seared scallops to the sauce.
I finished the saue with butter and chopped parsley. It was delicious!

Just got in from taking Andrew to Williamsport...what a gorgeous facility! I will post some pics soon. I just cannot get over the place AND it was not that expensive: $475 for 5 nights.

Gretchen, Keeping you all in my thoughts and prayers. I am all to familiar with the pain and misery that cancer causes. :hug:

Hailey is such a precious girl...give her hugs for me. :cutie:

Just got in from taking Andrew to Williamsport...what a gorgeous facility! I will post some pics soon. I just cannot get over the place AND it was not that expensive: $475 for 5 nights.

That is a good price! We paid right around that for Patrick to attend hunting camp two years ago and I swear when we drove up I thought to myself that the place looked like a Vietnamese POW camp. I remember thinking to myself that I wasn't leaving him there if he didn't want to stay. He loved it, but it was a far cry from Amanda's 4-H camp where they had swimming, boating, rock climbing, and other fun activities.

And we got a good laugh about you labeling A's things. Although maybe Aimee is right. If I had done that with Patrick's, maybe he would have worn more than the one pair of socks he wore over the 5 days he was there. :scared1:

Gotta run, my dog is pawing at my typing hand indicating that she is requiring my attention. ;)
 
I found the new home! Now I just have to go back to the old one to read and catch up.

Things here continue hectic! I didn't even cook today. Alan went out of town, and between getting him ready to go, and getting all the rest of us ready for church, I was too exhausted to get anything going for dinner. Instead, the kids and I went to KFC. It hit the spot, and that's about all I have to say about it.

I'm hoping to do better this next week. I do have 2 barbecues this week, one on Thursday and one on Friday. Then, we pack up the family and the tent/trailer, and leave for a week long family reunion. I'm not sure what the meal plans will be while there, but it will involve a traveling smoker and a night of fish.

I'm going back to catch up, now. Hugs and pixie dust to everyone. It seems like we all need it. You are all in my prayers!

Oh, I loved Julie and Julia! It was a great book! I'm really looking forward to the movie! A friend of mine worked on the costumes for the Meryl Streep portions of the movie. I can't wait to see it!

Gretchen- :hug: for your father and :rotfl: for Hailey. My DN used to do thing like that all the time, but with her she would go to use the bathroom and come out nude.

Just had chicken strips and mac and cheese for dinner tonight. I really need to get back in to better cooking. Going to have some grilled chicken for dinner tomorrow night with corn and some other vegetable.

We had pancakes and bacon for dinner. I threw blueberries in mine, DH likes them plain :confused3 He decided at 645pm to mow the lawn. :rolleyes: So, by the time he finished it was after 8pm and I didn't want to mess with the grill so I went with easy!

Anyone heard from Lindsay in awhile? I wondered how her MIL is doing.

Camp! I was one of those kids who never got to go to camp so I always get excited for the lucky ones! Good thing it looked good, that is completely a Mom benefit, as Gretchen said.

Bathing suits :headache: I think I am solely responsible for the summer that was not, I finally broke down and shopped for bathing suits. And early in the year too. Who knew I was really sealing the deal that it would rain 6 out of every 7 day here in NE!

The scampi was really good but I don't think Buddy liked it. He knew better than to complain after whining that there was not cooking on Saturday and that he had to go to his favorite grinder shop in the whole world :rolleyes1 but I don't think he ever got over the chicken piccata fiasco ;)

I love KFC! I am totally addicted to fast food, I love it! I am one of those folks who need to not have it because it is worse than chocolate for me. Kady will share two french Fries with me, I woul deat them all and order more if I had my way!

I saw on FB that she has started her own cooking forum on another message board.

The sun is out today :yay::yay::yay: Add that to Nola pounding away at one of the butterflies that are supposed to go on her little pool and I am :goodvibes Rattles and squealling make me happy!

My sister is supposed to come for lunch today to go over what I came up with for her Disney trip in September. I hope that she still comes by, she had to bring her little Daisy to the vet and I don't think she made it. She lost Riley last week so it is a rough time for her. Daisy is almost 19 and Riley was around 13 so they are longtime friends :sad1:
