Good Morning,

I'm here, feeling better but not close to 100%.
Greg did come right home & I ended up staying in bed & taking Benydryl & Motrin & it seemed to help.

Lily, is so tuned in when I don't feel well, she won't leave me. Greg had to pick her up & carry her outside to pee before he left for work & then she ran right back upstairs. I know enough fluff about 10lbs of fur:rolleyes1

I'm going to call Vickie later today or tomorrow...I think today may be to soon.

Kathy- The last time I made the ranch chicken I made fresh egg noodles. I wasn't to pleased with the comment from the peanut gallery- they didn't like them. I don't have a pasta machine either so I rolled them out by hand.

Ann- Today is a perfect day to rest, I'm glad your parents are close to spoil you. Has Ron stopped his night job or will he keep that until the new job starts?

Bethany- I'm sure as you get closer you'll have no problem packing, you must be getting so excited.

Maria- Hope your doing better today.

I'm hoping Vickie is as comfortable as can be.

Don't know what's for dinner, I have to head out to the store
 
Maria, I hope you are feeling better today. I get vertigo if I have fluid in my sinuses. It is one of the worst feelings.

Here are photos from last night. These are the Vietnamese braised short ribs that I made for John, with some baby bok choy and jasmine rice. John said that the flavor was excellent.:

John is out to dinner with clients tonight. I think I am going to use some of the leftover tofu and rice to make a bowl of congee for dinner. It is miserable here, raining and damp, so that should hit the spot.

I haven't had the chance to read back much, but I wanted to pop in and say hello. I did see that Vickie needs good thoughts for a successful surgery, and Maria was feeling ill. I hope you are better.

We are enjoying having Greg home. You would not believe the amount of food the man has ingested since his arrival. They worked them so hard that his body started burning muscle for food. :eek:

Dinner last night was barbecued ribs and chicken wings, baked orzo with cheese and roasted asparagus. One of my neighbors is renovating her kitchen, so we shared dinner with her family.

I'm thinking of all of you, and I'll keep in touch when I can.

Ron, quit his night job as soon as he got news he was offered the new one.
He has felt like a new man being home like a normal person with his family at night. This friday is actually his last day with his full time day job of 28 years. I still don't think he can believe it! Thanks for asking Robin, hope things are going well for you being at work too?!?!?!

I have GREAT NEWS!! Debi's biopsy came back, NO CANCER!!! :cool1::banana:
They don't know what the problem is, but it's not cancer so that is good, good, GOOD!! They are sending her to a infectious disease specialist, so we'll have to wait & see what comes of that. But we are all so relieved right now.

Ann, Take it easy my friend, Emma may be getting anxious to meet her family!

Maria, I hadn't even thought about the books! Don't worry about that! Just feel better.:hug: I get spells of vertigo & haven't found anything that helps. I just have to wait til it passes, it totally incapacitates me.

Lauren, I'm praying Tom doesn't have the flu! :flower3:

Us girls are going get pedis today. Alexis is going to be excited, DD came across a place with kid-sized pedi-spa chairs! We may go out to lunch & do some shopping too. My niece's wedding shower is this weekend.

I am busy at work today, so I probably wont be on much today. I have weight watchers tonight and Kady is sleeping over Nana's tonight. They have movies to catch up on I guess. :confused3

Today is typical Wednesday; I worked until 1am on stuff so I got here earlier to see if I can get a headstart before my meetings. I have WW friendly food on hand but we'll see what the evening brings as far as dinner options.

Becky - how did you cook the baby bok choy? I fixed some this weekend but chopped it up; didn't think to cook it whole. And it looks much better than mine did!

I just cut it in half, then melt a little butter in a non-stick pan, put the bok choy in with a little soy sauce, cover, and cook for about 5 minutes. You don't even have to turn it.

Sure, the recipe is adapted from Fine Cooking. They used different spices and did the whole thing on the grill, but I was afraid I would wreck my le crueset if I put it on the grill.

Vietnamese braised short ribs (adapted from Fine Cooking magazine)


For the ribs:
1 Tbs. hot Hungarian paprika
1 tsp. coriander
1 tsp. dark brown sugar
Kosher salt and freshly ground black pepper
2 lb. beef short ribs


For the braising liquid and glaze:
2 Tbs. peanut oil
2 cups chopped yellow onion
1 Tbs. chopped garlic
2 tsp. minced fresh ginger
3 cups low sodium chicken broth
1/4 cup plus 2 tsp. rice vinegar
3 Tbs. dark brown sugar
2 Tbs. Asian fish sauce
1 Tbs. soy sauce
1 whole star anise


For serving:
3 scallions, thinly sliced (1/4 cup)
Cilantro sprigs


Season:
Combine the paprika, coriander, brown sugar, 2 tsp. salt, and 1 tsp. pepper. Sprinkle generously all over the ribs and rub it in.

Heat a heavy dutch oven over medium high heat. Sear the ribs until all sides are nicely browned, 1 to 2 minutes per side. Let cool briefly and then tie with a couple of loops of butcher’s twine.

Return the heavy-duty pot to medium heat and when hot, add the oil. Add the onions and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and ginger and stir for 1 minute more. Pour in the chicken broth, 1/4 cup of the vinegar, 1 Tbs. of the brown sugar, the fish sauce, and the soy sauce. Add the star anise, bring to a boil, and then remove from the heat.

Put the ribs in the pot, cover, and place in a preheated 300 degree oven for two hours. Remove from the oven, uncover, and allow to cool slightly, then refrigerate overnight.

Remove the layer of fat that covers the surface of the cooking liquid and discard. Remove the ribs from the pot and set aside.

Pouring through a colander, strain the cooking liquid into a measuring cup. Discard the solids.

Glaze
Prepare the grill for direct grilling over medium-high heat. Pour 1 cup of the braising liquid into a small saucepan and stir in the remaining 2 Tbs. brown sugar and 2 tsp. rice vinegar. Over medium-high heat, reduce the liquid until it becomes syrupy, about 12 minutes—you’ll have about 1/3 cup.

Brush the glaze over one side of each short rib and grill glazed side down until the glaze begins to bubble and lightly darken, 2 to 3 minutes. Brush another surface with the glaze and turn the ribs. Continue to brush and glaze, turning frequently, until all sides are nicely glazed. Remove the cooking twine, and take the ribs off the bone. Drizzle with the remaining glaze and garnish with the scallions and cilantro.
