The What's For Dinner Thread - May '09(recipe index in OP)

Hit reply before I finished. :sad2: Dinner last night was chicken with artichokes and mushrooms in a lemony sauce, garlic mashed potatoes, salad, rolls, baked Ziti and cookies for dessert.

Dinner tonight will be a tortilla casserole, going to Costco to get a rotisserie chicken to make it with.
 
I wanted to post this...I received it as an email yesterday and I loved it.

Recently I overheard a Father and daughter in their last moments together at the airport. They had announced the departure..

Standing near the security gate, they hugged and the Father said, 'I love you, and I wish you enough.'

The daughter replied, 'Dad, our life together has been more than enough. Your love is all I ever needed. I wish you enough, too, Dad.'

They kissed and the daughter left. The Father walked over to the window where I was seated. Standing there I could see he wanted and needed to cry. I tried not to intrude on his privacy, but he welcomed me in by asking, 'Did you ever say good-bye to someone knowing it would be forever?'

'Yes, I have,' I replied.. 'Forgive me for asking, but why is this a forever good-bye?'.

'I am old, and she lives so far away. I have challenges ahead and the reality is - the next trip back will be for my funeral,' he said.

'When you were saying good-bye, I heard you say, 'I wish you enough.' May I ask what that means?'

He began to smile. 'That's a wish that has been handed down from other generations. My parents used to say it to everyone..' He paused a moment and looked up as if trying to remember it in detail, and he smiled even more. 'When we said, 'I wish you enough,' we were wanting the other person to have a life filled with just enough good things to sustain them.' Then turning toward me, he shared the following as if he were reciting it from memory.

I wish you enough sun to keep your attitude bright no matter how gray the day may appear.

I wish you enough rain to appreciate the sun even more.

I wish you enough happiness to keep your spirit alive and everlasting.

I wish you enough pain so that even the smallest of joys in life may appear bigger.

I wish you enough gain to satisfy your wanting..
I wish you enough loss to appreciate all that you possess.

I wish you enough hellos to get you through the final good- bye.

He then began to cry and walked away.

They say it takes a minute to find a special person, an hour to appreciate them, a day to love them; but then an entire life to forget them.

* Only if you wish send this to the people you will never forget and remember to send it back to the person who sent it to you. If you don't send it to anyone it may mean that you are in such a hurry that you have forgotten your friends.

Maria- I'm glad they didn't do any invasive testing yet, it seems like other things could be done first. At least you can blame your eating on stress, I just figure if I've all ready eaten something not so great for me, why stop there. I just love food.

Laura- We just had macaroni and cheese last night, and I really try to limit how often I make it, but if I'm feeling brave I might try the velveeta. It's the same recipe my gram and mom make so I've never had it any other way.

Nancy- That casserole looks really good, if I don't use the word bulgar I bet the other two would eat it.

So am I the only northerner lucky enough to have termites swarm?

Lauren, I agree with you...Glynis= Wonder Woman in my book! I just decided..................Bulgar casserole! I love it....Buddy hates it but he will survive and it is wicked good for him. He told Donny he is on a diet and did not even know it....just forced to eat "cardboard" :lmao::lmao::lmao:

I totally agree with you about Glynis...I think she has that Linda Carter costume under her everyday clothes!!! :)

If I served Ron bulgar casserole, I think he would just sit at the table waiting for the "real food" to come out! :lmao: At least your guy will eat theat stuff.

I definitely understand. Having a newborn is wonderful, but I don't know how I survived.

Laura, you are the other Wonder Mom on this thread. It amazes me how much you have your kids involved in and what a :thumbsup2 good job you do while Greg is away. I think your childrens age can be hard than a newborn...you make me exhausted!

:Greg is having a tough time in Boston & waiting for news. When I spoke to him at dinner time he said he was grabbing a bite at a local pub we used to frequent & head back to the hotel to do homework & then at 8 he called & said he was going to see the new Hugh Jackman movie so he's just not settled at all.
I on the other hand ate everything that wasn't nailed down. When I went on the scale this morning I couldn't believe the numbers:scared1:so much stress eating.
Not to sound like a Hallmark card or freak anyone out but I'm sitting here thinking what did I do before I found you ladies? Your a blessing in my life, during good times & bad & I thank you.

Sorry, your DH is having a hard time in Boston. I am sure he wishes he was with you while he is waiting on news regarding his DM. My prayers are still coming for health to you all. Please do not stress about your weight right now. I am a stress eater too and you have had more than your share of stress. Worry about that after everyone is well. We are all here to support you during your stress. I would tell you my weight if it made you feel better, and it is not even baby weight. I am going to focus after Emma is born to lose a little.

Ok, where did my post disappear to from this morning...how does that happen!!

DS & I are feeling much better and are well rested today. My poor DH is the one suffering now with a sinus cold. He is working both jobs today but is leaving his night job early to try to get some needed rest.

Today, I am heading to Target for a new iron, ours broke yesterday. I don't believe in ironing personally :lmao: but my DH irons daily. Then we are going to my parents for dinner.

Please keep my DM in all your prayers. They found a lump on her thyroid and she is waiting for the Dr. to call and schedule a biopsy. I will keep you all posted as I hear.

No worries Nancy. I am technologically challenged myself. When I get a new phone I usually ask one of the therapists to help me set it up and teach me how to use it. :rolleyes1

Here are pictures from last night. Since John nixed the margaritas, I made sangria. It was very fruity and light, and we have lots left for the rest of the week too!

Leona had her PET scan yesterday, we haven't heard anything yet. They decided nothing invasive is going to be done until the doctors look at the PET scan so we are just waiting.

I on the other hand ate everything that wasn't nailed down. When I went on the scale this morning I couldn't believe the numbers:scared1:so much stress eating.

You are all in my prayers Maria. :hug: And I'm with you on the stress eating. I've gone through quite a few bags of potato chips since Dad's diagnosis. All of which have gone right to my hips.


Oh ladies I am so excited - today is the day!! We go and pick Matthew up from college. I am so darn excited I couldn't sleep last night. We have really missed him. There is a picnic at 5, then an awards ceremony at 6:30. He texted me last night and said as SOON as it is over he wanted to leave. :cool1: He is all packed except for his refrigerator, microwave and printer that we will take in the pickup.


Thanks for the well wishes for Jay. I really appreciate them. If you would please keep my little family in your thoughts, that would be great. This is his 2nd tour to Iraq - he is to be gone maybe 18 months.

Enjoy your baby coming home! And I will remember your family in my prayers as well.


I just put Panko bread crumbs on boneless chicken breast, browned it in olive oil and a little veggie oil (to keep the OO from burning) poured bottled lemon juice all over it, about a cup, turned down the heat and simmered with the lid on, turning occasionally for about ten minutes.

That sounds delicious and I would make that tonight but no one in my house likes lemon but me. :confused3

Tonight's dinner is one I haven't made in a while - Lauren's basalmic chicken (a/k/a Tom's home chicken). And it provided an added bonus. When I ran into the store for the basalmic this morning the clerk didn't look at the label, just the bottle and then asked me for my ID! :dance3::dance3::dance3: Funny how the older I get the happier that makes me.
 


Maria- the only thing wrong with my phone is the user.....I am totally inept!

Ellen- I did not see that Jay was in Iraq. It is so hard on those left behind, I don't know how spouses and parents do it. Your family will be there for meals, and all of you will feel better.
I am so excited for you! Enjoy your mini family reunion and homecoming! As for the bulgar wheat, Buddy does not know what it is or that it is in the casserole. I just put it out, he makes a face, grabs the ketchup and Worcestershire and drowns it. His Mom never made casseroles or stews so he thinks they are not real food. Along with Mexican and Chinese. And anything else that is not meat and potatoes.

Lauren- I love that email!

Ann- it sounds as though you and DS are on the mend...now just to get your DH better :thumbsup2

Lauren, thanks so much for ruining my makeup. The tears are just running down my checks. Only kidding about my makeup - that was beautiful. And a gentle reminder we all need once in awhile.

Nancy, your Buddy just makes me laugh. :rotfl2: I love your stories. Life at your house must never be boring. Jay hasn't left yet, but will on Tuesday. He will leave for Fort Stewart in Ga and will deploy for Iraq from there. The longer he is stateside the better. Thanks for your prayers.

Glynis I have to agree with everyone else. :worship: I loved staying home with my kids. Something I still miss to this day.

I don't remember who asked but Matthew's college is just an hour away so we should be there in time for dinner. I know that isn't very far away, and we were able to see him weekly, but there is just something that makes me sleep better knowing we are all under one roof.

I am working late so dinner will be whatever I find. I'm feeling a little better but just completely dragging. There is a lot of "activity" here at work right now and I think my mind is just processing things. Tomorrow is my iron infusion :woohoo: so I should feel better in a week or two. I hope!

Poor Bob it's usually the other way around, I'm more of a night person, so while he's trying to fall asleep, I feel the need to have these "discussions". I guess it was time for him to turn the tables on me & get me before my coffee! Sheryl ~ Termites :scared1: OMG I have never ever heard of these. We spray for them in our homes if needed but we NEVER see them. I can't imagine seeing them swarm. :eek: I hope your and Bob's day gets better. Doug and I rarely speak for the first hour we are up. That is a happy day! I was thrilled to have Angelina back home for a few months before she went off & got married! ;) Even with the wedding planning it was our bests times together! She was only 1 1/2 away too, but at first it killed me...

You know we haven't always had termites swarming. I think it's the Formosan termite that invaded here years back.

Oh I came back to say WFD! DH came home for lunch ( help with supervising the help! ) but he brought home a little tiny bowl of she-crab soup from a friend. It's only one serving but it's loaded with crab, so I'm going to cook some halibut & top it with the soup. Avocado, tomato, vidalia onion salad on the side. and wine we will have good wine tonight!

Good morning...I am all off today. woke up an hour late, A took a 2 minute shower and then off to the bus. i am now giving T a bottle.

dinner is on the run tonight. a and i are getting haircuts...i am getting highlights and pedicure too. then we have batting cage practice.

Sheryl, you guys are just as important as family...you guys are like my therapy. all of us here on the wfd have been through so much together. i really appreciate everyone understanding how busy i am now.

I must really have you all fooled! There are days when nothing gets done. It does help that Katie is old enough to help out around the house, and that the other kids can do their own homework and jobs. Seriously, though, it's tough! We had to cut down on extracurricular activities in order to make it work. Strangely, we don't miss any of those activities, and get to spend more time together as a family!

Afternoon all! We actually saw the sun today. We had some more awful rain last night. Looks like we are going from monsoon to oven though. 90 degree weather in the forecast for tomorrow. Did I miss Spring? Anyway, since I had to work yesterday we're going to celebrate Seis de Mayo today ;) Going to make a taco casserole, have chips and dip, and some Dos Equis. Then watch the AI results show. I tried to vote for Kris last night at work (I know, I know) but the phone line would only connect like 1 out of every 3 times. So either Kris was getting tons of votes, or it's rigged (I'm voting for the latter :sad2:)

Laura, you are the other Wonder Mom on this thread. It amazes me how much you have your kids involved in and what a :thumbsup2 good job you do while Greg is away. I think your childrens age can be hard than a newborn...you make me exhausted!

Please keep my DM in all your prayers. They found a lump on her thyroid and she is waiting for the Dr. to call and schedule a biopsy. I will keep you all posted as I hear.

Well, it's afternoon here, and I got my computer back. Alan didn't have time to take it in...again! I sure hope he can get it fixed soon. It keeps turning off on me, and it's so annoying!

I'm so not sure what we're having for dinner. We were going to have pork, but I forgot to take it out of the freezer. Looks like we'll be having soup and sammies tonight, and pork tomorrow. That'll work! No fuss dinner. I like it!

The baby is napping, so I really ought to be folding laundry, but I HATE folding laundry. I'd much rather be here with y'all!
