What's the feasibility of doing a split stay between some nights that I would book on my own (paying cash), and some nights at a different resort done with rented DVC points? Would my luggage, etc be moved between rooms for me when it was time to switch? How would the airport shuttle work in that situation?

Second, is it a pain to do ADR's with a rented reservation? I don't know if I would be given a hard time when I called up to do the ADR's since I wasn't the actual member. Would the confirmation number be enough?

Switching from a regular cash Disney resort to DVC is just like switching between two cash Disney resorts. Bell Services will transfer your luggage. You will need to be present in the room for pick-up and delivery so you can get your claim tags.

Magical Express airport shuttle will be no problem. Assuming your arrival resort is cash, you can make the arrangements for that, and can probably make the departure arrangements also...if not, the DVC member you rent from will need to provide your departure info to Member Services.

For dining, just call the regular Disney dining number, they can now access the DVC reservation confirmation numbers.

We've done those kind of split stays twice. Stayed at POP on the weekend than DVC during the week. Both times we just got our bags to lobby/valet area, and headed off to the parks for the day. When we went to check in to our next resort our bags were already there. We've also done it both ways in terms of staying on cash then moving to DVC, and vice versa. If you start with a cash trip you arrange the DME to get to WDW, and the member you're renting from can arrange your return trip. Can't remember about the ADRs for sure, but I believe that I made all of ours myself - someone else here will be able to give you a definite answer.
 
We've done split stays twice before and have never had a problem. Bags are always at our resort when we check in. We also had no problems getting Magical Express back to the airport w/out being signed up for it.
We stayed on cash ressie for the first two days (Poly and WL) which I was able to set up ME myself and when we got to our DVC (on rented points) I was able to let them know that we would need transportation on the day of check-out.
As far as ADR's go your confirmation # for your DVC stay is what they'll use to make your dining reservations.
