I think I read one of the OPs other posts and they are headed there the end of next week. I remember because that is when I am going too. The links refer more to Christmas week.
I wonder if Disney is crowded right now because of Pop Warner? Let's hope that is the case. The unoffical site says Disney should be a 4 out of 10 crowd level wise on the 18 and 19 and pick up a lot each day thereafter. I would think Universal should follow suit?

i hate to see a post go unanswered so i tried to help out with the op's question.
i wasn't sure of the dates they were going so i tried to give some generic links in case that would help.
it is easier to have people answer the posts if they have dates in mind and not a general time period, i guess.
i looked at the pop warner site and their schedule.
i think they will be there for a few more days.
this time the pop warner youths are in 3 different resorts which makes a full house for those resorts.
the resorts will be packed where they are staying but the parks should not be too affected. the teams do their competitions during the day and away from the parks.
i have a friend at disney right now and she said the line waits are not good at the MK. that surprised me as this time period generally is not a heavy crowd period in the parks. the touring guide has been fairly accurate for park crowd levels in the past.
universal's crowd level is very high once it is Christmas. it stays that way thru new years eve.
this is only a guess, but from what i have been reading on the boards and on other message boards, the crowds at universal are ok at this point.
weekdays will have lighter crowds than weekends as it is at disney.
you might be correct in saying that the level for universal could start to increase around the 19th.
i have not been to disney or universal in the week prior to christmas and up to nye.
too many people for me....
