VEGAN Recipes--Please

Hi,
I was vegan for 3 year several years ago, I felt and looked Great.
Well because of social pressure I went back to adding cheese
and things in my diet.

Now the medical problems that I had corrected being on the vegan diet
had gotten worse and now I will be going back to Vegan diet to avoid
Medication that I think is very bad to take (Steroids for asthma).

Looking for recipes that are good tasting and not to hard to prepare.
I also cannot have ingrediants with preservitives (like sulfates).

If you have suggestions for Healthy packaged Vegan food--please
share the names of these products for that I can search for them.
I have several Healthfood stores in my area so it shouldn't be a problem
finds things.


Please help me make the transition to Vegan diet an easy one.

Awww, don't feel lonely. Here's a big Tigger hug from me. :hug: I'm not a vegan, but having lived in California for several years, I knew several people who were vegetarians and vegans. They have inspired me to incorporate more raw fruits and vegetables in my diet. Here are a couple of vegan recipes from my recipe thread.

Thanks so much for your support and the link that you provided.
I food looks great and I'm excited to expore all the different recipes found
there. This Sunday I will go to my 1st party and may not be able to eat
anything there so I'm thinking about making some of these cookies to bring with me.
I don't like to put my host and hostess out by expecting
Vegan Food--I understand how different of a concept this is for some people.
I also do not talk much about my diet unless I am asked, I don't like
to make others feel uncomfortable. My health is the most improtant thing
right now so I have to succeed in my transition back to Veganism.
 


Have a great time at the party. I hope the cookies turn out great. Don't worry about others feeling uncomfortable because of your decision to go vegan. If they get weirded out, that's their problem. Like you said, you need to think about your health first. My mom has been going low-carb for a while now. It's a little hard for her when she goes to parties, but she always lets the host know about her diet and does her best to stick to it. Usually, she brings a low-carb dish or eats a meal before going to the party so that she won't give in to temptation. She's hasn't really had any problems except for the occasional jabs from her friends. She's doing a great job, though. I'm really proud of her. Go mom! :cheer2:

If it makes you feel any better, vegetarian/vegan restaurants are really trendy in California. There are several celebrities who are vegetarians or vegans (hopefully, that won't scare you away from your diet :rotfl:). On the Food Network, they showed a vegan restaurant that serves gourmet-ish dishes made from raw fruits, vegetables, nuts, etc. They don't cook anything, they only dehydrate some foods. You can even order a full vegan Thanksgiving meal! If your friends try to make you feel bad about your diet, tell them that going vegan is the new trend-- Cosmopolitan magazine said so. :rotfl2: Who knows? They may want to become vegans, too! ETA: I forgot to mention that vegweb.com seems to be a really great vegan online community. There are tons of other vegan websites. You may want to join one of these forums so that you can get support from other vegans. It may make your transition back into the vegan lifestyle a little easier. :)

Hi there! I'm actually a Pescatarian but I do have some recipes for Vegan dishes! I will share them with you in the future sorry I'm in the middle of cooking but yes! Do not fear I have them!

I'm not vegan but this is a fabulous cake that I make regularly. I love this blog and have made many recipes from it.

Also, we love vegan whip cream made from coconut milk. Try to get a coconut milk with about 12-14 grams of fat. Super easy and delicious.


Vegan Whipped Cream

Yield: 2 cups

2 14-oz can coconut milk (*Thai Kitchen® coconut milk, unsweetened)
1/2 cup powdered sugar (or to taste)
Vanilla extract to taste

1) Place coconut milk in refrigerator overnight, right-side up. Do not shake.
2) Place mixing bowl and electric beaters in freezer for at least 30 minutes to chill.
3) Remove coconut milk and pierce bottom of can with a pointed can opener and drain off the liquid part.
4) Open top of coconut milk can and spoon the thick coconut cream into chilled bowl.
5) Whip coconut cream with chilled beaters until fluffy, about 30 seconds. Do not over whip.
6) Gently whip in powdered sugar.
7) Keep refrigerate until ready to use. Holds in refrigerator for several hours.
 
Thai Cucumber Salad

I make this one before pasta dishes all the time!

1/4 cup of white rice vinegar
1 or 2 Tablespoons of Sea Salt
1 large Cucumber
1 Shallot

Slice the cucumber but don't peel it! It loses some of it's nutrients when you do that. Dice the shallot really well. Then toss cucumber and shallot in a serving bowl. Pour the vinegar over both then sprinkle on the Sea Salt. You can mix with really well with your hands or spoon. Serve cold. So if your not ready for it yet just pop it in the Fridge until it's time for dinner.


Asparagus-Cashew Stir Fry

I make this one at least two to three times a month! I love it!

4 Cups of cooked rice (I prefer brown rice because it's healthier but white is fine)

Soy-Ginger Sauce

2 Tablespoons cold water
2 tablespoons cornstarch
1 1/2 cups vegetable stock or water
3 tablespoons low-sodium soy sauce or Tamari I think Tamari doesn't have fish in it.
1 tablepoon minced fresh garlic
1 teaspoon dark sesame oil
Dash of white pepper

Main parts of the dish

2 tablespoons Canola Oil or Olive Oil
3 cups of asparagus frozen is fine just make sure you let it thaw out before you cook with it.
4 meduim scallions chopped
1 red bell pepper chopped
1/2 teaspoon of garlic
1 cup of raw cashews make sure they don't have salt on them!

Cook the rice.

While the rice is cooking stir in water and cornstarch until blended. Add the rest of the sauce ingridients then set aside.

Heat the oil in a large nonstick skillet or wok over medium-high heat. Add the asparagus, scallions, bell pepper and garlic. Cook stirring constantly for 5 minutes.

Reduce heat to medium. Stir in the sauce and cook until the sauce thickens and bubbles. Then fold in cashews.

Serve over rice.
 
I am vegetarian but would be vegan if I had regular access to more products. I tried it for about 6 months and just couldn't for lack of products. I even shipped in needed items from Amazon etc. just did not work for me. I still do not buy any animal products (leather shoes etc.). I purchased a Vegan cup cake book that ROCKS! I use it all the time to take places where I am the only one who has a clue about being vegan outside my own family and they all LOVE them! LOL I also purchased a Lap Top Lunch box and the recipe book from it and I pack a varied healthy lunches daily. Many of their recipes and ideas are vegan as well.

Well it's not really that hard to be a Vegan. If you shop at Farmer's Markets like SunFlower and Whole Food or Trader Joe's. It's kind of pricey sometimes but I've notice that more and more places like Safeway and Kroger's are selling Vegan and Vegetarian foods. I find tons of Boca in my local supermarkets freezer section all the time. I have the Laptop Lunch Box too but I think I'm going to go to a stainless steel bento style one because I pack a lot more food than the box can hold. Hahah I eat 5 to 6 meals a day.
 
Munchy seeds! I'm not vegan but I love this instead of crisps (chips) and stuff. I buy comercially-prepared ones, but you could make your own with some pumpkin, sunflower seeds etc and some soy/worcestershire sauce (OK, worcs sauce is not vegan but its dairy-free so maybe it will be OK).

Just to cheer you up - or depress you, depending on how you feel at the moment ;) - I was at a conference a couple of months ago and one of the delegates got to the buffet and asked for the vegan option - she was pointed to the salmon:rolleyes1 and the salads (but no-one could tell her what was in them). She asked to see the catering manager and was offered an omlette:confused::confused3 I think she ended up with some green leaves - and of course she couldn't eat cakes of biscuits.

So be prepared wherever you go!
