I appreciate hearing such good things about FF, my favorite WDW restaurant but I hate having Chef Jens, who was truly good, bashed. To each their own but IMO the quality at FF has ALWAYS been top notch (with the exception of about one year, at the end of Chef Jens tenure and prior to the hiring of Chef Tim due to DDP mandated changes, which seem to have worked out).

I appreciate hearing such good things about FF, my favorite WDW restaurant but I hate having Chef Jens, who was truly good, bashed.

We weren't bashing him; he's a perfectly nice man, and he was very friendly. We just found his food to be on the more traditional/uninspired side, whereas the new chef had some truly interesting combinations. We actually hadn't been there in Chef Jens' last year there, mostly because on our previous 3 trips, we'd always left feeling underwhelmed.

To be fair, though, it takes a lot to impress us (even Thomas Keller left us saying, "Eh. No big deal," but the new Flying Fish chef did impress us. This could also be because in our minds, we'd set the bar kind of low for Flying Fish and were favorably impressed

Thomas Keller never did anything so that's not news, neither did the much celebrated Robert Curry. Chef Jens took Chef Johns creations (who was EXCELLENT) to new levels and so far Chef Tim hasn't shown any significant flair other than following a formula, IMO.

Of course we're pretty hard to please and maybe our three visits since Chef Tim has taken the helm aren't enough.

Haha, try posting that on Chowhound (Manhattan board) - you will get creamed, as did I. Apparently it's high heresy to say that Mr. Keller is all flash & no substance. Our V&A's chefs Scott & Aimee make it much more worth our while to visit there.

Jens is at California Grill, so you can always switch dining venues if you don't care for the more exotic combinations of the new FF chef. We generally stick to the sushi menu at the California Grill, so chefs can come & go, but our sushi is always enjoyable

BTW, have you had the tuna at Roy's yet? I was dazzled by how tender and fresh this was; it was probably the best quality tuna I've had.

Jens is a friend so I'm protective but we seldom get to eat with him any more as even the head chef has little clout in getting last minute reservations at CG.

I don't know Roy's? Where is this, in Orlando?

As for FF, we've noticed the quality improve BACK to pre Jens departure quality under chef Tim so in no way am I disappointed with them (or him), in fact I'm thrilled to have one of my favorite restaurants back. It just seems as good as ever to me under Chef Tim, not better than (which is obviously your take)...

Chowhound? No thanks, I'm having a colonoscopy tomorrow so I think that'll suffice.

I don't know Roy's? Where is this, in Orlando?

Roy's is in Orlando, on West Sand Lake (Restaurant Row) about a 20 minute or so drive from WDW. We live here, and with all the craziness of the DDP keeping the WDW restaurants full, we've had to look farther afield if we want to eat out occasionally Well worth the drive & well worth a try. Roy Yamaguchi is actually going to be at the Food & Wine Festival, doing some of the chefs' events.

Thanks for the review... WE have just added Flying fish to our meal list.... as it just sounds wonderful and in walking distance to Beach Club ( I THINK)
