View Full Version : Cranberry salad recipe.....

Okay, I am doing Thanksgiving this year for my in-laws. In the past (my family), our addition to Thanksgiving dinner regarding cranberries was the canned cranberries, sliced on a plate. I do NOT want to serve cranberries that way to the in-laws!! OMG would that be something! Anyway, I have NO IDEA what to do with cranberries. My Great-Grandma in-law is bringing a jello, so I don't really want to have another jello, do any of you know of any EASY cranberry salad, side dishes or something I could make!! I need help! I am already sweating it because all of the sister-in-laws are telling me about the outstanding oyster stuffing their grandma used to make and let's just say, there will be no oysters in my stuffing!!! I am a little nervous about this whole thing. Please help!

I usually make cranberry sauce using the recipe on the package of Ocean Spray cranberries.

That's good cranberry sauce- I use less sugar than called for since I like the tartness.
You might also look into cranberry-orange relish. I know it takes a package of cranberries. a whole orange (seeded), and sugar, run through a grinder or food processor- I think the recipe is on the cranberry bag.

Another name for the oyster stuffing is "Scalloped Oysters" which might not sound so gross to you. Let me tell you that this is one of my favorite parts of T'giving, but no way do I want it in my turkey!! :crazy2: It's just served as a side dish - in its own dish.
Oyster Filling/Stuffing/Dressing/Whatever you call it at your house
1/3 c butter
4 c crushed OTC crackers
1 pt oysters (or just broth)
½ tsp salt
¼ tsp pepper
2 c oyster juice & milk
Combine butter with crackers. Layer crackers & oysters, topping with liquid. Bake at 350 for 30 – 35 minutes.
[NOTE: This wasn’t enough liquid. I used 3 cups & that still wasn’t enough! Another recipe said to cover the crackers with milk. That might be a better guess on amounts.
And this is the recipe I use for Cranberries.
Cranberry Relish
1 bag cranberries (this is usually 12 oz, not a pound)
1 - 2 oranges, minus seeds but using rind
1/2 c walnuts
1/2 c celery, diced fine
1 - 2 apples, peeled & chopped fine
3/4 c sugar (I used 1/3 c Splenda instead)
Place half cranberries & an orange in a food grinder or food processor. You should try to have everything evenly chopped. Place in bowl & repeat with remaining cranberries & orange. Stir in sugar/Spenda. Put nuts, celery & apples through as well & stir into cranberries. Store in refrigerator. Yield: 3 - 4 cups
*NOTE: My mother used to use a box of Raspberry Jello instead of sugar...not to make a mold with it, just to sweeten it. Last year I noticed that you can get Cranberry Jello too.

Cranberry Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups cranberries -- ground
1 cup sugar
10 ounces miniature marshmallows
quart Cool Whip -- thawed
small can crushed pineapple -- drained
Mix cranberries and sugar. Let stand 2 hours.
Mix marshmallows and Cool Whip. Let stand 2 hours.
Mix cranberries and marshmallow mixtures together with pineapple. Set overnight.

I make a cranberry waldorf salad that's really good and VERY popular - basically 2 packets raspberry or cranberry jello, 1 can whole canned cranberry sauce, cranberry juice or apple cider for the liquid, a cup or so of each - chopped unpeeled tart apple, chopped celery and chopped walnuts. I serve it with a side of lemon mayonaise.

This one is good served over cream cheese with crackers, or you can serve as a side dish.
1 bag of cranberries
1 large can crushed pineapple
1 cup chopped pecans
1 1/2 cups sugar
3 apples do not peel
Put on ingredients in food processer and mix, do not over process. I like it a little chunky.

That salad sounds yummy. I doubt I will be making it soon, though. Neither my husband or my son will eat cranberries :(

Here's a salad recipe we love but it's just a basic salad and uses dried cranberries...
spinach leaves (or lettuce if you prefer)
dried cranberries
dried apple slices
walnuts
That's it! A delicious dressing is the Spinach Salad dressing, I forgot the maker - they also make the Champagne dressing and it's a glass bottle... :confused3 If you want to know the name I can post it, I am actually going to pick some up today. :)

I remember my mom always making oyster stuffing, but I never knew how she did it. What are "OTC crackers"? I thought I might give this recipe a try. It sure sounds easy.
I think that's the brand name they use now - I forget what the "O" stands for, but the "TC" was Trenton Cracker I think. They're those big somewhat round crackers. You can't crush one in your hand - you have to put 2 back-to-back between your palms to crack them over your chowder. For this recipe I put them in a Zip-Loc bag & use a meat mallet on them. LOL
There's another brand that are hexagonal shaped & all but flat. Those crush easily. I can't remember the brand name for those, but I did a quick look-up & saw that Nabisco has what looks like them. I've always preferred the OTC type, but both work & taste good. :teeth:

Aha!! A picture is worth a thousand words. :rotfl: I know right where those crackers are in my grocery store, but I'd forgotten all about them. I don't know what their proper name is; we've always just called them "oyster crackers." Duh! I never really knew why they were called that. Now, I do.
