View Full Version : Frittata cupcakes?

Has anyone tried to make frittata in cupcake papers? I had seen a recipe for these awhile back, but was unsure if I wanted to try them. I am making fritatta for a breakfast party thing for work on Monday, and was going to make it in either a 12x9 or similar pan, but we have all kinds of people working here, and I didn't want to put ham, bacon, cheese, mushrooms, peppers, onions, garlic, etc in all of them, since someone may not eat those things (I eat them all, and want to put everything in some of them).
ANy tips, pros or cons would be appreciated.

I have seen egg muffins at potlucks before and they were yummy! I think some of them also had those little potato squares (fresh from the bag, LOL) in them. Good luck with your seach, I'm interested in what you find out too.
