View Full Version : What do I do with all this Ricotta?

I bought two containers of Ricotta for SBD's ricotta cremes...and well, I can't stand them. They taste gritty and not so good at all. So now my question to you is what should I do with the Ricotta?
And does anyone like the ricotta cremes? Am I making them wrong? There's got to be a trick to this. Either that, or we just get so desperate to eat something sweet that anything will do? :rotfl: I'd rather take the jello and cool whip any day.

I liked those Ricotta cremes - maybe too much. Ricotta is great in lasagna - with whole wheat noodles and lots of veggies, low fat mozarella.

Lasagna is good. But it may have to wait a while. We go to DisneyWorld in 5 weeks and I've lost only 7 pounds in my first 4 weeks of SBD. Not a great start. I'm trying to stay on phase 1 as much as possible with only a few small exceptions to phase 2. It's such a long and tedious process to lose weight. But I know when we get to WDW I'm going completely off the "diet" so I thought I'd better be really good until then.
I guess I just don't like the taste of ricotta in anything except lasagna. Maybe I'll try some creative recipes with it of my own design. :scratchin

I did a quick search over on the SBD forums of http://www.3fatchicks.com/ for some ricotta ideas, and people suggested either thinning the ricotta with a little water and whipping it until smooth, or blending it in the food processor - both techniques should make it a lot creamier, which may improve the texture to something you can enjoy. HTH!

Wow, I just went to that site and boy! What a bunch of new stuff for me to look at! Thanks so much. I think I'll try whipping the ricotta a bit, like you said. Maybe add a little cool whip to it to smooth it out? I love all the recipes on that site. I'm ready to make that bean brownie for sure, just out of curiosity if nothing else. :rotfl2:

I like ricotta mixed with salt, black pepper and some low fat maio, it makes a perfect turkey breast sandwish complement... :teeth:
But, I dont like nothing sweet made with it! :scared:

If you blend a little ricotta in with your pureed cauliflower, it has a texture/tase more similar to mashed potatoes

I love that site. They have the BEST recipes and I learned a lot I didn't know about what I should be doing over there.

I did SBD for a month. Lost 13 pounds and then gained it all back (at WDW in 1 week so be very careful/or prepared to gain like crazy when off the program). The ricotta with vanilla i liked tons more than the chocolate. I agree-the texture is weird! I was just dying for something sweet and desserty and so I think I just put up with it!
