The cruise line emailed me back with the recipe. I am cutting and pasting from my email.
broccoli and maytag blue cheese soup
8 heads broccoli
4 each onions, roughly chopped
1/2 teaspoon garlic, chopped
3 ounces blue cheese
1/2 quart heavy cream
3 pints vegetable stock
2 ounces crushed walnuts
4 each baking potatoes, pealed roughly chopped
sweat off the onions, broccoli, potatoes with the garlic. Add the vegetable
stock and simmer until soft. Add the heavy cream and blend together, check the seasoning and add the blue cheese.
