My mother-in-law showed me how to make a quick, low-fat chicken dish in the skillet. Brown some chicken breasts without the skin in the skillet. Then add chicken broth (low-fat, low sodium possible choice) to cover. Add a few lemon slices. Some pepper. Let poach covered until the correct temperature and no longer pink in the middle.

It works great for those nights you don't want to spend time cooking.

I serve it with brown rice and peas or steam some frozen or fresh vegetables. Also could make it with rice-a-roni or stuffing or white rice - but these are not as healthy.

Finish with chocolate chip cookies - only kidding - some fresh fruit for dinner.

Sounds good and very easy to make. I'll probably try this one next week for me and the DH.
