Does anyone have a Sausage Stuffing recipe that they're willing to share? Thank you. :)

I copied this from another post of mine on another thread-hth

I can help with stuffing-I tear up a large loaf of white bread-a little stale works best. I add chopped celery, onion,salt and pepper and parsley-enough to be seen throughout and add enough water to get it to come together-but not wet.Then add about a 1/2 a package of the breakfast sausage that comes in a tube-break it into pieces(raw) and work it into the stuffing. that would probably be enough to stuff both 15 # turkeys, but since you've got 2 you should try 2 different stuffings-just for fun.I can also give you another recipe for potato stuffing if you're interested. If you have any questions just ask-I don't work from recipes usually- too many years of watching my grandmother and now doing it for the whole family for so many years.

Sausage and Apple Stuffing

Amount Measure Ingredient -- Preparation Method

6 ounces bacon -- diced
1 pound pork sausage
2 cups chopped onions
2 cups sliced mushrooms
1 cup chopped celery
1 teaspoon dried sage -- crumbled
1 teaspoon dried thyme -- crumbled
1 teaspoon salt
1/4 teaspoon pepper
3 cups tart apples -- cut in 1/2" pieces
10 cups day-old white bread -- cut in 1/2" cubes
1 cup chopped fresh parsley
1 1/2 cups chicken broth

Sprinkle bacon over bottom of 3 quart casserole. Cover with paper towel. Microwave on HIGH 3 1/2- 4 1/2 minutes until bacon just begins to brown, stirring once.
Crumble sausage meat in. Microwave on HIGH 3 minutes, stirring twice, until meat loses its pink color.
Add onions, mushrooms and celery. Cover with paper towel. Microwave on HIGH 6-8 minutes until onions and mushrooms are wilted, stirring twice.
Stir in sage, thyme, salt and pepper, then the apples. Cover and microwave on HIGH 2 minutes. (Apples will still be crisp.)
Meanwhile, mix bread and parsley in a large pot or bowl. Add apple mixture. Toss to mix.
Stir in broth a little at a time until well blended and stuffing is as moist as desired.
Return mixture to the 3 quart casserole. Cover with lid or vented plastic wrap. Microwave on HIGH 13-15 minutes, rotating dish 1/2 turn and stirring once.
Let stand covered 10 minutes for flavor to develop and to equalize the temperature.
