Hi All, Does anyone have a good recipe for Pumpking bread? I need to make this for my son's Thanksgiving meal at school. Thanks for your help.

pillsbury has a pretty decent pumpkin bread mix in the box... all you do is mix it up and pop it in the oven. :D (it barely makes it to an hour in my house before it's gone). their banana bread mix is excellent as well. :D maggie

Pumpkin Bread

4 eggs, well beaten
3 c sugar
1½ tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 c oil
2 tsp baking soda
3 c flour
2/3 c water
1 c pumpkin
3 12 oz coffee cans
Grease coffee cans & preheat oven to 350 degrees. Mix eggs, sugar, salt, nutmeg, cinnamon & oil. Add baking soda to flour. Add water & flour/soda to first mixture. Mix well; then add pumpkin & stir gently until well mixed. Pour into coffee cans – about 2/3 full. Bake at 350 for 1 hour. Cool 15 min. before removing from cans. [Note: It is recommended that you mix by hand rather than using a mixer.]

When I make this bread it lasts about half a day before one of the kids has scarfed it down!

PUMPKIN BREAD

1 C oil
2 C sugar
1 15oz. can pumpkin
4 eggs (add one at a time)
3 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
2 ¼ C flour
3 tsp baking powder
1 tsp salt
1 tsp soda

Mix as listed. Grease two loaf pans or one tube pan and bake at 300 for 1 hour.

I don't have my recipe to post right now, but if you use the recipe above and want to use less spices buy the Libby Easy Pumpkin Pie mix. I do add extra pumpkin spice but you don't have to since the spices are in the mix.
