Depending on what time of day it is you can enjoy afternoon tea. I've read many posts that couples enjoy it together and DD and I are going to try it in Nov..
Rent mouseboats and cruise around Bay Lake.
Have a massage in the spa.
Lay in a hammock by the beach and RELAX.....

I really enjoy checking out the shops and also sitting in the lobby. Last time we were there, a ragtime band was playing from a balcony off the mezzanine and later a piano player was in the main lobby area. It was a very relaxed and calm place to hang out - a really nice change from the hustle and bustle of the parks and many of the resort lobbies.

DH and I hopped on the monorail and toured/shopped at the CR, Poly and GF. We had a quiet lunch at the Poly and enjoyed the theming best. (It was pretty romantic for us!)

Tea is fun! It's relaxing and a different experience. Tasty too!

DH and I had breakfast at Kona while the kids did the Pirate Cruise - I don't think many resort restaurants are open mid-afternoon, though.
You could hop the monorail and shop Mainstreet. Maybe ship some Christmas presents home.
