Hi all!

Just wanted to share with those of you who may not have tried spaghetti squash yet, but were curious about it...I made some last night and I really liked it!

It was super easy to make too...just cut in half, boil for 20 minutes, then use a spoon or fork to "shred" it, although it pretty much shreds itself. It's slightly crunchy, and thin like vermicelli.

I put spaghetti sauce over it, but I tasted a few pieces without anything on it, and it had a very nice, slightly sweet taste to it. One of my friends just eats it with butter (and I think she said cheese too).

Yes, it is good isn't it? I like it! I used to make that allthe time for my kids when they were small.

It is fabulous with butter and salt and pepper. Nice side dish instead of pasta.

We love it with butter and fresh grated parm.

Or I do grilled chicken/alfredo sauce with it.

Is this OK for Atkins? Any idea of the carb count? I used to eat spaghetti squash (with butter and parmesan cheese) and I really like it - haven't thought about it for a while but it sounds good!

According to the carb counter on the Atkins site, it's 3.9 net carbs for a 1/2 cup.

I'm not on Atkins, but I was under the impression that spaghetti squash was a substitute pasta for people doing low carb?
