View Full Version : Trying to find Quick Chicken Gumbo SB Recipe (I FOUND IT, if anyone wants it)

I did the trial membership for South Beach online, but cancelled once I finished the four week trial period. I found a delicious Quick Chicken Gumbo recipe on one of their forums and loved it. I copied it, but can't find the paper. Since I can't access their site anymore, I can't find it there.
Can someone please help me?

I just searched the SB website and can't find it. I also searched the message boards and it's not there either. Any other ideas?

It was under the "recipes" forum, I think under chicken, but their forums are really hard to navigate when you're looking for a particular post.

Quick Chicken Gumbo
Serves 2
1 T olive oil
1 skinless, boneless chicken breast
1/3 c. ff chicken broth (more if you like it soupy)
1/2 med onion
1/2 red or green bell pepper
1/8 t minced garlic
1/2 of a 14 1/2 oz can of stewed tomatoes
1/2 T creole or Cajun seasoning
about 5 oz. frozen okra
1/8 t hot sauce
Cut raw chicken into cubes. Heat oil in a large skillet over med. high heat until hot. Saute' garlic, onion and pepper, stirring often. Season chicken w/salt and pepper as desired and add to skillet. Add broth, tomatoes (not drained) and okra. Simmer for about 8 min. or until everything has thickened a little. Stir in hot sauce and season to taste. If you want a thicker gumbo, turn off the heat and add 1 t. gumbo file' powder and stir another 1 to 2 min. If gumbo gets too thick, add more chicken broth or hot water.
I made this tonight and added shrimp at the end of the cooking process and cooked for about 3 more min. DELICIOUS!!!
