View Full Version : ATKINS/LC PEOPLE: What do you eat as side dishes with your dinner? Any suggestions?

I am getting tired of the same old salads as a side dish with steak, chicken, etc. What else do you guys eat ? I am trying to get some creative ideas so i won't get so bored!:Pinkbounc

Let's see...I like green beans with crumbled bacon and mushrooms. Zucchini with olive oil and parmesan cheese. Spaghetti squash cabonara. There are always the "faux" tatos. Broccoli, I like mine plain, but DH needs cheese sauce on his.

There is the Healthy eating board above and lowcarbfriends sites with recipes.

There are some ideas here - but make sure you read the recipe well - some aren't so low carb.

The mock mashed potatoes from www.lowcarbluxury.com are soooo yummy. I've served them at a party and everyone was quite impressed. Check out their veggies and sides recipes!

I like creamed cauliflower and broccoli salad (I think the recipe is on the LC recipe board here)
lots of times we don't even need much of a side

one of our favs is bacon wrapped scallops on skewers broil in butter and garlic also add tomatoe, onion, mushrooms, peppers to skewers and that's a meal for us

We like asparagus with hollandaise (easy to make, but you have to make the sauce at the last minute), and broccoli with butter, parmesan, garlic, and pine nuts.

I really try to vary our salad too--adding things like feta, avacado, hama nd cheese, almonds (the almond accents in the salad section are good), etc (though not all at once!)

I buy a bag of broccoli slaw at the market. Heat up a little olive oil in a fry pan, add a little chopped garlic, then add the slaw. It cooks down quite a bit. I cook it for about 20 minutes on med-low, stirring often. DH loves this. It is tasty, and doesn't need much more other than salt and pepper.

But our favorite veggie is turnip! Mash it and it is way better than potatoes!

Thanks for posting. I was also thinking about adding sme variety and everyone's suggestions sound delicious. I like sauteed spinach in olive oil w/ garlic.

Ooohh - I just found those Almond Accents too! I got the ones with bacon bits and sundried tomatoes. Had them on my salad and THEN read that serving size was ONE tablespoon. Oops. Will have to control myself in the future but what a nice change!

I love brocolli with cheese sauce. The recipe for the cheese sauce is on our Eating Healthy Board :)

I make baked faux mac and cheese, faux potatoe salad when I'm missing the high starch sides

2 cups chopped cauliflower
8oz shredded sharp cheddar cheese

combine those in a 9 in baking dish

the mix together

4 eggs
2 cups of "milk" either low carb milk, 1 cup cream and 1 cup water, or 2 cups coconut milk.
1/2 tsp salt 1/4 tesp pepper
1/2 tsp prepared mustard
pour mixture over cauliflower and cheese. You can top it with more cheese, seasame seeds or Keto crumbs
Bake at 350 for 25-35 minutes.

For the faux-tato salad just use cauliflower in your fav recipe (making adaptations as needed to switch to low carb items)
