...and you are following Atkins, Wednesdays and Fridays are very hard during Lent. (We fast from meat on Wednesdays too.) :(
I do love shrimp and other shellfish - but they are expensive. And I have been eating a lot of tuna (I just tried a modified Tuna Loaf, if it's any good, I will post the recipe.)
And I am ashamed to say that I have been allowing myself one starchy meal per week on either Wednesday or Friday when I have pasta, pizza, or fried fish.
Does anyone have any suggestions for getting through the next 4 1/2 weeks?
Guess I am really understanding "sacrifice" this year. :rolleyes:

This has been a problem for me too. I've done a vegetarian crustless quiche, I know it has eggs. With enough cheese you might not notice. I've also done spaghetti squash marinara. I love that. What about Atkins pancakes? I can make a meal on pancakes. There's a pizza recipe in the eating healthy board. Just do veggies. I hope these help. I'll try to come up with some more ideas.

How about a low carb alfreda sauce with shrimp and/or crabmeat [you can use canned]. Instead of pouring it on noodles -- put it over broccoli and cauliflower.
Use the canned shrimp/crab for a seafood salad also. Put it on romaine and top with your favorite veggies, cheese, and low carb dressing.
Salmon or Tuna cakes [use pork rinds and parmesan cheese instead of bread crumbs]
Soup and Salad. Make a cream of soup using cauliflower as your base [I think I have the recipe in the recipe room]. Have a meatless dinner this way.
I agree -- try a crustless veggie quiche!
How about a veggie wrap. Use the low carb subway type wraps with all of your favorite veggies. Add a little shrimp if you'd like also.

Have you tried experimenting with the low carb breading ideas?
Atkins bake mix, almond flour, parmesan cheese? I've never tried to fry my fish because I love it just with lemon and butter but I fry chicken tenders and chicken wings that have been coated with parmesan cheese and it is very tasty. I'll bet you could make a low carb batter using the bake mix too. It wouldn't be zero carb but it wouldn't contain flour or sugar.

I agree with kath, Beth. I use almond flour and parmesan cheese for breading all the time! It's really BETTER than flour because it's so tasty!
