I would try to book a princess meal- either CRT, Princess Storybook Breakfast in Epcot, or the dinner at Grand Floridian with Cinderella and the mice.
My DD4 and nieces- 7 and 10 have all three been twice in the last 3 years. The hits of the trips were:
MK- castle show, Fantasyland- all of it except Snow WHite ride, Ariel's Grotto!, parades- day and night, Wishes fireworks and Tinkerbell flying from the castle!
MGM- Voyage of the LIttle Mermaid show, Beauty and the Beast show, parade, Fantasmic!, princess meet and greet was going on the week we were there- everyday about 1 1/2 hour before the parade for about 30 minutes- ask about this, Playhouse Disney show, Muppets 3-D (though DD4 didn't love the 3D shows this year!)
Epcot- character bus- ask for times, meeting princesses in the countries:we saw Aurora in the International Gateway, Jasmine in Morocco, just missed Mulan in China also saw Brother Bear characters in Canada; they enjoyed Honey I Shrunk the Kids 3D show, playing instruments from each country
AK- Festival of the Lion King, safari ride, Camp Mickey Minnie to meet characters, Pochontas show
These were the highlights. These are such magical ages to take children. Just a hint- DD4 truly believed EVERYTHING! She would hide from the bad guys in the parade and once refused to walk down Main Street because she saw Captain Hook near the castle! This was great- but could be interesting as well! She screamed through the first night of Spectromagic b/c of the dragon float from Fantasia. Even Snow WHIte stopping to talk to her didn't stop her crying! I've really tried to tell her that the bad people aren't bad at WDW- they are just silly! She's OK with that now- we'll see in December when she sees the Big Bad Wolf again!:p

Just got back to Michigan after a week with my 5 year old daughter.
In the Magic Kingdom, she loved Buzz Lightyear's ride, the Adventures of Winnie the Pooh, Splash Mountain, Peter Pan, and the Jungle Cruise. She really enjoyed Belle's storytime. She also liked touring Minnie's house. Meeting with the characters is still her favorite thing to do. The toontown fair tent always has a good assortment of characters. Of course you will have to take them on Dumbo, but get there early. The line gets long quickly.
In the Animal Kingdom, she liked the Pocahontas show and the Kilamanjaro safari. She was a but scared on the Dinasaur ride. She also enjoyed the Festival of the Lion King.
At Epcot, she liked the Figment ride. She really got into making her mask at all the countries in the World showcase. If you are going to circle the World Showcase, pick up a mask on your first stop and decorate it along the way. It stinks having to carry the thing all day, but Angela liked making it. We also bought her a passport she got stamped at each country.
We went to Mickey's Backyard BBQ at Fort Wilderness. She got to dance with Goofy, Mickey, Minnie and Chip & Dale. I am not much into country music, but the food was good and Angela had a great time. Seems the other kids had fun also.
Don't miss the Playhouse Disney show at MGM.
Hope you have a great trip.

If she is a fan of the Princesses, then you should really do a breakfast mentioned in an earlier reply. My daughter has dressed up in her Halloween costumes for the past two years (Cinderella and Belle) and had her picture taken with the princesses. We ate at the castle when she dressed like Cinderella and then Norway when she dressed like Belle, but unfortunately, Belle was not there that morning. We had fun with all the others and actually got to see Mulan for the first time, which was a treat!!
Hoop Dee Doo Revue is a must for all our trips now. She loved everything about it.
MK: Belle's storytime, Cinderella's Celebration, all the rides except Space Mountain.
Epcot: Doing the masks in all the countries was a lot of fun! Seeing the characters in Italy. I'm not sure what they are called, but they walk around in costumes and masks. My daughter, who is somewhat shy, was very interested in these and had us take a picture of her with each one. It was actually a special moment I will always remember b/c one of them brought her up to the platform in the center of the court , knelt down and had her plant a kiss on his check while he held her hand. It was very sweet to watch b/c they are very slow in their movements and the music was playing. Just one of the Disney moments!
AK: Everything at this park with the exception of Dinosaur and Triceratop Spin, which we have yet to try.
MGM: All the shows, character greetings at the hat.
There are just so many things, it's hard to list them all. Good Luck! 5 is a great age b/c they can ride most of the rides and they are still interested/believe in the characters.

Make sure you take them to toontown. There are areas to meet Mickey, pooh and friends and cinderella. Sometimes it is very crowded but it is during those crowded times where it may be the only place to actually meet and greet and spend a few minutes with the characters. My soon to be 5 year old loves it. Have fun!
