But I'm going to give her a call alittle later today and let you know what's going on,, It's just not like her to be so quiet and not even logging in,, something's not right.. I should of called awhile ago but kept hopeing maybe it was just a computer problem.. But I don't think so anymore :( :(

I've been wondering the same thing.

FYI- The monitor for my home computer is broken, so I won't be around as much until we get a new one.

sorry you guys did not mean to worry you! My car engine gave up the ghost and we are down to one car for the moment(while my $4000 new engine is being installed OUCH!!!!!)

And with School back in session it seems all I have been doing is running everyone here and there and back again have not had 2 secs( honest) to sit down and logged in and read let alone post...I promise never to do it again!!!

Went to Kahunaville the other night and had a new drink called an "Island Rita" I don't know what's in it, but I could go for another.:sunny:

Bailey's Irish Cream Cheesecake
Servings [Reset] Keys : Cakes Desserts Chocolate Pie Irish Ireland European
Ingredients :

Crust *
10 whl graham crackers, broken into pieces
1 1/4 cup Pecans (about 5 ounces)
1/4 cup Sugar
6 tbl Unsalted butter, melted
Filling *
1 1/2 lb Cream cheese, room temp.
3/4 cup Sugar
3 lrg eggs
1/3 cup Baileys Irish Cream Liqueur
1 tsp Vanilla extract
3 oz Imported white chocolate
(such as Lindt), broken into pieces
Topping *
1 1/2 cup Sour cream
1/4 cup Powdered sugar
1 1/2 oz Imported white chocolate,
24 x Grated pecan halves

Method :
For crust: Preheat oven to 325degF. Lightly butter 9-inch diameter springform pan with 2 3/4-inch-high sides. Finely grind graham crackers, pecans and sugar in processor. Add butter and blend, using on/off turns.
Press crumbs onto bottom and 2 inches up sides of prepared pan. Refrigerate 20 minutes.
For filling: Using electric mixer, beat cream cheese and sugar in large bowl until smooth. Whisk eggs, Baileys and vanilla in medium bowl until just blended. Beat egg mixture into cream cheese mixture. Finely chop white chocolate in processor using on/off turns. Add to cream cheese mixture.
Transfer filling to crust-lined pan. Bake until edges of filling are puffed and dry looking and center is just set, about 50 minutes. Cool on rack.
For topping: Mix sour cream and powdered sugar in small bowl. Spread topping onto cooled cake. Refrigerate until well chilled, about 6 hours.
(Can be prepared 1 day ahead.)
Sprinkle grated chocolate over cake. Place pecans around edge and serve.
Note: I've fixed the cake with and without the topping, and I prefer it without the topping. As a suggestion, prepare the topping, but serve it on the side.

Oh goodness! DH would love that! Unfortunately, I can't make it for him due to nut allergies. Would it work without them? I imagine it would.

Course, he could make it for himself. HA!

I would think you could just use more graham crackers since they're just in the crust and the topping....

Good idea! I just printed it out and showed it to DH and he would prefer it without the nuts. Maybe I'll make it for Valentine's for him. Thanks for the recipe, Mal!
