Well, it sort of was, but it was WW friendly and soooo yummy!
Have you tried the faux mashed potatoes - made with cauliflower? I will post the recipe we used - they were really pretty darn tasty.
Often, DH makes dinner and tonight he outdid himself with boneless pork loin with salsa used as the "sauce" it was cooked in- which cooked down to the "gravy" - served over "mashed potatoes" mmmmmmmmmm it was good!
We have leftovers - so when I reheat them - then guess I can say I made a yummy dinner ;)
Seems like it could be either a ww friendly or a low carber dinner too.

Although I love cauliflower, I can't think of faux mashed potatoes as potatoes or my mouth revolts. I have to think of it as yummy mashed cauliflower, then I'm fine ;)

I'm with you Nativetxn!!! We tried the mashed cauliflower and there was only one word to describe it(that I can write here):YUCK!!!! We kept reading how it was supposed to taste just like mashed potatoes and how you would never know the difference but there is NO WAY I can be fooled with that!!!
But of course everyone is entitled to their own opinion and if you think it tastes like mashed potatoes then GO FOR IT!!!!

I just got a head of cauliflower to try this recipe. I'm rather skeptical. I'll be sure and let you know how it goes. :)

My husband uses whipping cream with the pan drippings to make absolutely wonderful gravy. It has a few carbs, but they are worth it! Mashed cauliflower is not as good as mashed potatoes, but even my 9 year old DS likes them and both of my guys like being supportive of mommy. :)

I tried mashed cauliflower with cream and butter... BLECH.
However... with cream cheese, chives, a little butter, and salt & pepper to taste... heavenly! Definitely NOT potatoes, but even one of our finicky friends LOVED them.

If you aren't low carbing it, the powder/flake mashed potatoes aren't bad. I whip them up when I am in a hurry and then make the powdered gravy. I know it isn't the real thing, but it works in a pinch and the WW point level is not too bad!! When I make the potatoes, I used chicken broth instead of the milk and water. Yummm!!

I actually really really like the mashed cauliflower w.cream and butter. SOmetimes I add grated cheese to it. Or take the leftovers and sautee them in a little butter until they are crusty. Yum! Of course, I love cauliflower anyway.
It doesn't taste like mashed potatoes to me, and the texture is all wrong, but I like it.
