My grocery store had whole chicken's on sale and so I bought two. I threw them in the freezer to cook yesterday. It was so good I have to share what I did.
First of all, I thawed the chicken out only enough to take it out of the plastic wrap. I put it in my crock pot (I have a big pot and the whole chicken fit in) and sprinkled a dry package of italian dressing on the top. I put the crock pot on high and cooked it for 4 hours. I then took it out of the crock pot and put it in a 425 degree oven for 45 mins.
It was moist on the inside and crispy on the outside. My family couldn't believe that it wasn't one of those store bought chickens. It was the best chicken I have had in a long time!

sounds yummy we must have been shopping in the same store LOL I bought whole chickens yesterday too! will have to try that one!

That sounds so good . . . and relatively low carb, too!! I'm going to have to give it a try. I can almost smell it, now.

Thank you for this great treat! I made it and it was so easy and great! I used a large turkey breast. And the best part! It makes so much juice I made for the first time ever really good soup! I Drained the juice out and put it in pot, added celery, onions, and carrots. Let that cooke for a long time. then after dinner that night I picked off the rest of the turkey and added it to the pot. I added salt and pepper to taste. Then put it in the fridge and let it cool over night. Next day scapped the fat off the top. cooked noodles and heated up the soup mixture and added the cooked noodles! It was perfect! Can you see how thrilled I am! I used up all my left overs! And I was able to take a yummy pot of soup to my friend who is starting chemo!
WONDERFUL!
(my chicken/turkey soup usually always tasted like either salted dish water or peper!)

quick question about the roasted chicken. do you add all the juice and stuff from the crockpot or put the chicken in the dish all by its lonesome self?
also, can i put the crock part of the crockpot in the oven?

not sure what you mean exactly. But I took the chicken out of the crock pot and put it in a pan and stuck that in the oven. It I were to do it again I would put some juice in the bottom of the pan and baste about 15 minutes into cooking.
