Does anyone know how far in advance reservations can be made? I know Disney takes them years in advance.

I really don't know. If you call the hotel or Loew's reservations to find out, let us know!

In general, hotels will typically take reservations 330 days and/or 11 months in advance. I'm not sure what Disney's rules are (1 year or 11 months/330 days), but they may be different, but it's less likely that Universal would be different since they are part of a chain (Loews).
