Looking for dining help

Our first trip to Universal will be coming up soon (we have been to WDW 5 times) and I need some help with dining options, are there priority seating arrangements?, and has anyone ever had dinner at Emerils?

Will you be staying onsite or off? That could make a difference to making ressies. There have been some terrific posts about Emeril's on this board. Just do a search at the top of the page.
