I found a great way to use up extra tomatoes and basil from my garden. I bought some Lavash bread, brushed it with olive oil, and covered it with sliced tomatoes, fresh basil, slices of mozzarella, some low fat ricotta, salt, pepper, and crushed red pepper. Bake at about 450 for about 10 minutes:D

another easy and tasty treat...Brush bottom with lightly with olive oil, cut top of sprinke with garlic and salt to taste cover with mozzeralla cheese and pop on the grill till cheese is melted!

Yum! I love a tomato, basil and mozzarella salad too.
