Many of the posters here have links in their signature area which will take you to albums they have done. Sorry I don't have any of mine posted.
A couple general thoughts is to think about how you want to showcase the trip. By day? By "event" - dining, characters, park - regardless of how you may have visited them.
Not sure what size book you scrap (I do 12 x 12) but generally any size lends itself to two page spreads of most things. Sometimes multiple two page spreads.
I always start with a cover page in special trip books, and like to include an enlarged shot I particularly like. One of the reasons I tend to think in terms of two page spreads on books of this nature is they tend to go more quickly. After all you're only picking out half as many colors, papers, etc! :p
Have fun!
