It's another one of those things I love to have at Boma. Here's the recipe:
Yield: 8 servings
1 pound Sweet Potatoes, peeled, medium dice
1 pound Potatoes, peeled, medium dice
To taste Salt and Pepper
1 T. Coriander, roasted
1 T. Cinnamon, toasted
½ cup Honey
¼ cup Butter
Steam all of the tubers until tender. In a mixer mash everything together. Check the seasoning, adjust if needed.
Make sure the potatoes are cooked well.

I haven't made this for a while, but I did quite often there for a while. The version I received had listed 1/4 cup sugar instead of the 1/2 cup honey. I always thought they forgot to include the liquid - as it's too dry the way I got it. Do you make it without any of the liquid when you make it with honey? I don't know if I'd want it that sweet, though.

Gee, I don't know. I just got the recipe after my Memorial Day weekend trip. I haven't had the chance to make it yet. The stuff they had was a nice consistancy -- not too dry and not real wet either.

I agree that the FuFu at Boma's was great! Definitely not too dry. I just started using some of the liquid from steaming the potatoes & that works fine.
One thing, though - if you're using fresh spices (as opposed to using ones bought at the grocery story - I have a spice store locally) you may want to start with half the spice & add until you're satisfied. The first time I made it, it was actually over-spiced...and I even used measurements! ;)
You've inspired me. I think we'll have this over the weekend as I still have a couple sweet potatoes in the closet. Mmmmmm!
