I think that may have been my recipe! Thanks for the reminder. I haven't made that since last summer. It was one of my favorite summertime meals. I also would add cauliflower to it at times.

Wovenwonder's Brocolli Salad

Broccolli Florets
Crumbled cooked bacon (reserve drippings)
Shredded cheddar cheese
chopped onion

Dressing -- Mayo, bacon drippings, and Splenda to taste

Mix first four ingredients and toss with Dressing.

YUMMY!

That does sound really yummy but I have a question...

Low carb for sure, how is it on the fat servings? Any idea? The bacon drippings and mayo make me hesitant.

Thanks
Deb

Deb,
You can make a variation of the same recipe. I use to do that during my low fat days!:D Use fat free mayo and splenda to taste [omit the bacon drippings] and use fat free cheese if you choose. You can even use a lower fat imitation bacon bits instead of the bacon. This can be adjusted to meet almost anyone's needs.

That recipe looked really yummy when I was cruising the thread the other day but I didn't print it out. I'm trying to eat "healthy" overall - managed carbs, low fat, regulated sodium - you know all those "issues" that make up health risks.

Okay, I added fresh broccoli & more bacon to my shopping list. I am anxious to give it try! Sounds like something I would love!!:p
