Lucky for me that I can eat the carbolite bars, they have soothed my sweet tooth many times.
Rhonda, I never thought about eating the whipped cream by itself, works for me ;)

There are a LOT of carbs in sugar-free pudding mix... it's made up of starch... each serving has anywhere from 6-10+ carbs, just for the powder, and then you add 6.6 carbs for each cup of cream... depending on your restraint (or lack thereof, in my case! ;) ) it can add up fast.
For the same flavor, use it a teaspoon at a time and make a mousse...
TRULY Decadent Chocolate Mousse
4 Tbs. heavy (whipping) cream
1/2 tsp. cocoa
1 tsp. sugar-free instant chocolate pudding powder
1-2 packets Splenda (or to taste)
1/2 tsp. vanilla
Whip cream until peaks form. Add all other ingredients and continue beating until well blended. Use spatula to scrape into a small bowl. Chill 5 minutes and enjoy.
Makes one serving at about 5 carbs. If you use a teaspoon or two of DaVinci sugar free syrup instead of the Splenda, you save yourself 1-2 carbs right there.
Change the pudding flavor, leave out the cocoa, and you have a whole new treat!
