Does anyone have the recipe or something similar to the Tomato pesto Tony's (MK) serves with the bread?
Thanks!!!! Just had it again last week and that stuff is sooo good! :D

I have this one! Yummy!
4 oz. olive oil (lupi brand)
4 oz. sundried tomatoes (rehydrate until tender)
2T Italian parsley choppes
2T fresh basil
1T fresh chopped garlic
2 oz. grated parmesan cheese
2 oz. chopped pinenuts
2 oz. balsamic vinegar
1 T tomato paste
3 oz. crushed canned tomatoes
2 oz. red wine
1 oz. diced white onion
salt to taste
Yield: 2.5 cups
Method:
First rehydrate sundried tomatoes by soaking in warm water for a few minutes until tender. Places basil, garlic, pinenuts, parsley, onion, and sundried tomatoes in food processor or blender. Puree until well incorporated. Add all remaining ingredients except parmesan and olive oil. Once again puree until incorporated. Finally, stir in olive oil and parmesan cheese, salt to taste.

I've never been to Tony's but this does sound yummy! Thanks for sharing the recipe.

We have tried making it on a couple of occasions from the recipe card Tony's gave us a couple of years ago and it just didn't taste the same. When we ate there on Feb 7th We asked the CM about the recipe and he said they sometimes use cashew nuts and Canola oil in the recipe. Wonder if that may be the difference or it just needs some Pixie dust or a better Chef on this end.LOL

I made a note of what you said about the cashews and oil. We found a jar of Tomato pesto at the store this weekend and no where near Tony's but it at least gave hubby a taste of it. So I'll be attempting the recipe soon myself :D
