We are going in July, no choice due to schedules. Anyway what are your tips for staying cool besides the obvious ac, water etc.

Have you ever looked into cooling vests?
I would really suggest you look into touring plans so that you can plan for going back and forth from indoor activities to outdoor activities and back to indoor ones again. Also, I find that that having a detailed touring plan keeps me from trying to do "just one more thing" over and over again as the day wears on and gets hotter and hotter; it reminds me to get my family out of the parks. You can go back in the evening when it's getting darker and cooling down.
An umbrella may also help as it'll keep the sun from beating down on you. Just be careful in crowds as most people at WDW really aren't paying much attention to where they're going and umbrellas are at some people's eye level.

Consider renting an ECV (best to do it from an off-site rental), if you aren't already. You'll be doing less work to keep moving so won't build up heat quite as fast. If you're really concerned about cognitive symptoms in heat you could use a wheelchair instead, but you'd need someone to push.
I also want to second the alternating indoor and outdoor rides and the cooling vest suggestion.

My son has Epilepsy and we live in Fl. We try not to take him out if its over 80 but well thats not always possible. We have a fan for him that goes around his neck. We also bring a washcloth in a zip lock bag and wet it down. it seems to help keep him cooler . That way we can either wipe him down with it or put it on the back of his neck, forehead etc. plus ice creams, water and other yummy cold things too. We try to keep him in the Ac as much as we can. He dosent like using a wheelchair but I think it would be smart to get a EVC. Dont make someone else push you because it will tires them out quickly.I pushed my Gma once and Boy not doing that again! We are taking him with us on vacation in June to Nc. Va, and Dc, you just have to be careful and know the persons limits. Hope this helps. the vest idea seems like a good idea also but we have never used one

Teacher schedule, so we go to WDW every July. All attractions are air conditioned. This helps a lot.
Also - if you stay on property - take advantage of EMHs in the evening. The parks are open late. Rest at the resort during the hot afternoons, go to the parks in the evenings when it's cooler. :goodvibes

I used a neck cooler. I got one from copaxone it helped more than I thought it would. I also used a scooter.
