Does anyone know when the boats to take you to MGM and Epcot start in the morning?

It depends on the Park operating hours. I believe boats start and stop running 1 hour before and after Park opening and closing.

That would be correct... One hour before... and one hour after. And they mean it... If Epcot closes at 9... those boats stop at 10pm, regardless if there are people left behind due to a full boat. (I don't agree with this... but that's how it currently is)
