The flight gets into MCO around 9:00 so I'm thinking arrival at Beach Club around 10:00ish. Will the Market Place or Beaches and Cream be open for a quick bite? ESPN Club? Does anyone know?

You should be able to get something at the Marketplace they're open till 11:00pm.
ESPN will also be open for sure.
Not positive of Beaches and Cream's hours so I won't comment on that one, someone out there should know.

We arrived at MCO on 1/31 around 9pm and it took until after 11p to get to the Beach Club. That was the worst magical express experience we have had. We sat and waited at the airport for a long time and then we had 3 or 4 stops before BC.

When we got there, everything was closed - well, I can't speak for ESPN (didn't go that far).

At least you'll have the option of room service if ME doesn't get you there in time. Room service is 24/7.

Stop and pick something up at the airport before you board the bus. They had many options to choose from. I'm sure they have a few sub shops for sandwiches.

Another nearby choice is the Buffetria at the Dolphin- it isn't a long walk from the Beach Club and is open 24 hours a day. They do not take room charges or DDP though.

BW pizza window open till 11 also. But worse case scenario, you can do room service for stuff! or even go down to DTD.

The ESPN Club at the Boardwalk usually closes at 12:00 AM or 1:00 AM depending on what day it is, so at least they are open the latest.

If all else fails, another thumbs up for Picabu (formerly Buffeteria) at The Dolphin. They're open 24/7 and have a huge selection of hot & cold foods, snacks, beverages, etc. at reasonable prices (for WDW anyway).

We did room service at the YC once. It took forever. My teens were asleep waiting for them to come. We order two pints of ice cream to share and they were like soup. Not a good experience. (I didn't complain because it was so late, and I wanted to go to bed. We were leaving in the AM.)
