I shoot in color then process to B & W during post processing via Lightroom, Topaz, Paint Shop Pro, etc. I away keep the original color image as well.

I'd highly suggest shooting in color, then converting to b&w later. You can always convert your color pics to b&w, but can't turn your b&w's to color. That might not be the case if you shoot in RAW though.

Same as above. I shoot in color and then convert. Sometimes I know when I take the picture that I am going to convert it and pay particular attention to shadows and contrast. Sometimes it's a nice surprise that I find one that I love in BW, but didn't intend for it to be. Above, the shot of the tombstone was only ever intended for B/W and the coffee image was one I converted because the bright blue labels didn't match my office decor. :)
