I hope this doesn't sound too cheap but...here goes.
I wonder if it is frowned upon to order 1 entree and an appetizer or salad and not order another full entree??? After reading some posts about portion sizes and (IMO) I do not like to see food go to waste. Too many folks are going hungry and its hard to throw out untouched food. We are planning buffets but would like a few sit-down meal also. Would this be acceptable when ordering an all-u-care-to eat entree? Or would the normal entree portions be satisfying??

There is no problem splitting an entree and/or appetizer/salad as long as it is a non buffet meal. I don't think you can get away with splitting any buffet meals.
Although I wish you could especially with a young child...
I have a 4 yr old who is not a big breakfast eater, but she loves the characters and I like breakfast, so I just "splurge" for these and use my DDE card. Considering a bagel is more than enough for her at breakfast it is quite expensive at $9.99 a bagel!! I try to get her to taste things but most times she isn't too cooperative about it.
I just look at it as part of the entertainment cost. It is a lot easier and more comfortable seeing the characters at a meal (in most instances), than standing in line at the parks to see them.
Sorry to get off subject, the restaurants vary as far as portion size goes. My dd & I will try to order an appetizer or salad for each of us and then maybe split one entree at dinner and treat ourselves to dessert.

My Mom and I do it all the time, some waiters have even suggested it. Some will split it in the kitchen, some will just bring an extra plate.

We split meals sometimes, too.
I agree with you about 4 year olds at the character meals. I have to look at it as entertainment cost, too, because it's painful to shell out $50 for her 5 character meals knowing how very little she eats. I'm glad my 11 year old is still a child, so I guess it balances out. I don't think a 4 yr. old should be charged the same as an 11 yr. old, but it's not a big enough issue for me to cancel those 5 (6 if I can get Cindy's) character meals.
You can't share at buffets, but you can at other restaurants where the food is portioned for you.
