So for a 4 night Dream cruise, there are 3 meal rotations. Is it always the first night that is open, or is it a random night that is your open night? Thanks!

You don't have an "open" night. You will repeat one of the restaurants and have the priate themed menu in that restaurant for the night.

If it is the same as the Wonder and Magic, your second and third nights will be the same dining room. For example on the Wonder, there is TAAP, PTTA, APPT - the third night is pirate night and the menu is the same in all restaurants on pirate night.

Thanks everyone! We were trying to decide if Palo would be a good choice for us, but I'm thinking that the 3 nights of rotation plus the pirate night would be enough diversity for us!

Works pretty much the same way. The rotation just repeats itself.

We opted for the Palo brunch on the sea day of the 4night. That way you didn't miss any of the restaurants and still got to experience Palo. Given the rotation, we would have been most inclined to do Palo dinner on Pirate night, which is the night before the sea day. It's too much to do brunch the day after having dinner at Palo, so we opted for the brunch instead.
