first off, I apologize for asking the most repeated question on the board, but ... what should I take?

Option 1 - my current lineup
nikon 18-70mm
off brand 70-300mm (non-VR)

Option 2 - rent both of these
Tamron 10-24mm f/3.5-4.5
nikon 24-120mm f/4

Option 3 - rent an 18-200 VRII

I'm also bringing the 50mm f/1.8 too much fun to leave it a home.
and the camera is a Nikon D70 (1.5x crop factor)

This trip will be our 3th trip to the World. I'm not as interested in getting shots of the shows this trip so I don't think I'll need the extra reach of the 70-300 and it's really disappointing in most cases. Considering just leaving it a home all together, but I don't think 70mm is long enough.

Option 2 will let me use the 24-120 as a walk around lens (36-180mm effective range) but I would need the wide angle in some instances thus renting the UWA as well.

Option 3 to keep things simple.

any advice? my last trip included the 80-200mm f/2.8. I don't think I want to lug that around again.

I would go with either option 2 or 3. Your option 3 is my travel set. I take my 18 - 200 and my 35m 1.8. I find that I use the 18-200 95% of the time, only switching to the 35m in low light situations like dark rides or museums, etc.
I do like the ultra wide in option 2. I'm looking at getting an ultra wide zoom or prime in the future. It's next on my lens lust list. So I can see how you'd like to have this in WDW. There are many opportunities to shoot wide in the world and the results can be quite spectacular.
