Has anyone ever asked for the recipe for the chilled mango soup that is served on the Magic at the very first luncheon buffet? I'd really like to try it. If no one has it, I'll ask on September 28.

Hi.Rikersmom!!!!! I missed that delicious soup at the embarkation luncheon. My friend had it had raved about about it, but I was too full to try it!!!!

We asked for the recipe during the Art of Entertaining series so they printed it up and handed it out the last day. Here it is! Note though that it makes 7 gallons or 300 30oz portions!:earseek: Enjoy!

Chilled Orange and Mango Soup

30 lbs frozen mango puree
1 gallon buttermilk
2 gallons orange juice
32 oz. clear honey
Season with: 3oz of salt and 2oz of allspice.

Blend mixture until totally smooth. Chill for 1 hour and serve garnished with fresh mint.

I loved that soup, I just couldn't remember when it was served. I thank you for the recipe. Now does anyone know how to only make a gallon?:D

Thanks, Mickey4me! Guess I'll get out my calculator and try to scale this down a bit. Don't think I've ever looked for frozen mango puree--so that might be a challenge. At least knowing what goes into this wonderful soup gives me a shot at doing a few experiments in my kitchen. If I come up with anything good, I'll let you know.

Look carefully in the frozen fruit section of your grocery store. I was very surprised to find it in "ziploc" type bags along with frozen papaya. I can't wait to make this recipe!!! Thanks!

I was very surprised to find it in "ziploc" type bags along with frozen papaya Pal2Pluto - by chance did you find it at Giant?? or was it at the new WalMart Supercenter that just opened in Carlisle? I'm thinking I may have to try my hand at scaling down the recipe this week....;)

Okay........I think I've got this pared down....those with more smarts in cooking....go ahead and correct me :D

For 2 quarts of mango soup...........

2 lbs mango puree
1 cup buttermilk
2 1/4 cup orange juice
1/4 cup honey
