On our really hot days I've been making Tuna Salad or Chicken Salad sandwiches, or we'll have a green salad and throw some Louis Rich Chicken Strips on top. You are right, there are some days that are too hot to cook!

My hubby has a work meeting so it's just my son and me.
I'm either heating a couple of "bowls" in the microwave or boiling hot dogs. "Bowls" are those Uncle Ben's or Mrs. Paul's things.
Not only is it too hot, it's too much to cook for only two people.

I'm making my Taco Salad tonight...
Head of lettuce
Tomato
Can of beans (ranch style, pinto or black)
Marble Jack cheese
1 bag Doritos (any flavor) (crushed in small pieces)
Optional Taco-seasoned ground beef.
Combine everything but the beef, slather on as much Green Goddess dressing as you like, then dish up, adding the beef last.
Yum!

I like bacon, lettuce and tomato sandwiches when it's hot out.:)

Take Out from our local restaurant!
DH is ordering Surf N Turf, DS is ordering Seafood Scampi, and I a Spinich Salad (they're huge...enough for the 3 of us).
DS usually cooks dinner, but your right it is way to hot!

There's a really yummy salad that has romaine lettuce, penne pasta, feta cheese, black olives, scallions, and tomatoes, cucumbers or whatever other veggies you like. Dress it with creamy ceasar dressing.

I think we're doing a salad and pasta. Hey, we might even get adventurous and throw them together. LOL
