Can you use your dining plan snack credits if you're only getting ice cream or do you have to use a table service or counter service credit? We've never been here so I was just wondering.

You can't use snack credits in a TS restaurant for anything. Beaches & Cream is a TS restaurant.
They have a take-out window where you could use snack credits for a small ice cream cone or sundae, or a drink. But they do not serve any of the specialty sundaes there. To get those, you have to be seated in the restaurant.
You would have to use a full table service credit even if you are only ordering ice cream, so I'd suggest that if you want to go in for ice cream only you plan to pay cash.

I would pay OOP instead of burning up a credit to eat here.

Nope....counts as a TS credit....no ADRs, though.

Beaches & Cream is a TS, not a CS. They have servers who take your order (inside the restaurant - they do have a carryout, but only for ice cream and drinks. No food or specialty sundaes are available from the carryout.)
