I am going to MK in May of 2011, however we are only going for one day. Does DDP exist for one day tickets, and is it even worth it?

DDP has no relation to park tickets at all, except that most guests must purchase tickets as part of a package reservation in order to get DDP.

You must stay in a Disney resort to get DDP. If you're staying at a Disney resort for that one night, then you can purchase a one-night package with DDP and a one-day ticket.

If you have an annual pass, you can purchase a one-night ticketless package at a Disney resort.

If you already have a one day ticket you plan to use, you'll have to buy another one to get a DDP package.

If you are a DVC member staying on points you don't have to buy tickets at all to purchase DDP.

If you are not staying at a Disney resort, you're not eligible for DDP.

Now we are likely going to stay at POP From Thursday Night through Sunday morning, but will only be going to MK one day, so can you do a DDP for the other days even if your only going to be going to the parks for a day? Does a DDP work for the Food Court at the Hotel?

You have to get DDP for your whole resort stay, not just for the one day you plan to spend in the park. Your DDP will be based on the 3 nights you stay at the resort. There are three different dining plans to choose from. You can use counter service credits to eat at the Pop Century food court.
