I was told that it costs 2 TS credits for kids when they also go to a Signature Restaurant, which considering that the kids meals are only $7 to $11, it doesn't seem worth using both their credits...would it be better to pay OPP and use their credits for a breakfast?

The only problem is that they will have credits left and you won't. So you'll end up paying out of pocket for the adult b-fasts. If you were going to do that extra b-fast anyone then it makes sense, otherwise, you'll spend $$ trying not to waste it.

You can only use kids' credits for meals from a children's menu, so it won't work for you to use their credits for all of you for a breakfast. If you're okay with booking extra meals, using the kids' credits for the kids and purchasing the adult meals, you could certainly do that. It might end up costing you more out of pocket overall.

I tried to spread out DDP credits for adults and children so that I paid OOP for adults and/or kids at each opportunity (for example using child credits at a buffet is good but not so good for adults vs. the opposite for al a carte table service). I wasn't too successful winging it; I needed to have a written plan to avoid making a mistake.

If you are planning to eat at some of the lower cost meals: Sci-Fi, buffet breakfasts then pay out of pocket for the adults and use the kids TS. Then pay out of pocket for the kids at the signature meal.
You will end up paying a bit more over the cost of the DDP but you will have extra TS meals.

Don't forget to add in the cost of the dessert and drink when saying that the kids meals are only $7 to $11. At some of the 1 point restaurants everything is include for $8 or $9 but not at the signature restaurants.
For example at Narcoossee's my kids order the filet mignon for kids $13, the chocolate brownie sundae $6, and a drink (which is about $2.5). That is $21.50 plus 6.5% tax that is included for two points on the dining plan. That is double the cost at other 1 point table service restaurants.

That's an excellent point! I just looked at all of the signature menus online, and it looks like it's impossible to get out of any signature for less than $16 per child if you order an appetizer, entree, and dessert (same items that are included for about $8 at a 1 TS location)
