I don't have an answer to your question but just wanted to say that Deluxe dining is a LOT of food....just make sure that is what you really want before you decide and pay.
Have fun and enjoy your trip!!!

Dining plans must be booked 72 hours before arrival. I would assume that means changes too, but it doesn't hurt to call Disney tonight and see if they can upgrade your package. It will have to be paid for right away if they can, but my guess is that it's too close to your travel date to change.
If you can't change, just figure what your lowest cost meals will be and pay for those OOP. Look at your ADR list and check Allersnet to get an idea of pricing. Tax on meals is 6.5%, and that's included in the DDP too so take that into consideration when comparing prices. If you have any 2 credit TS meals you really have to do some math to figure if paying OOP would work for those to free up 2 credits for other meals.

Yes, it's too late. You can't make changes to your package within 3 days of arrival. If it's a DVC reservation, it's 48 hours; if you're going tomorrow you couldn't change that one either.
