What would you do?
We are staying at Animal kingdo villas the 1st week and wilderness lodge villas the second.
should we get dining plan both weeks? or one?

We have never gone without the Dining Plan, but we've never stayed that long either. Personally, I would skip the dining plan one week, especially since you have the kitchen.

I would do the dining plan the first week, but not the second week.
If you have two separate reservations (as in two different numbers, because you're switching resorts) you should be able to add the dining plan up to 72 hours before your second reservation. You should have a good feel by day 4 of your trip whether you want to do the plan for the second week as well.

Even when I was using the dining plan I could not imagine using it for two full weeks.
Since you have two DVC reservations. you can add DDP to both if you want without any park ticket purchase requirement, and you have until 48 hours before arrival to do it (72 hours is for package reservations, not DVC). So you have an extra day to decide whether to call Member Services or not.
If you are not DVC members staying on points - if you booked through CRO and are paying cash on a package reservation at the villas - then you have 72 hours.

I go for 2 weeks at a time and I go during Free Dining. Great to check out all the TS restaurants.

Question, can we get the Deluxe dining plan and stretch the TS to over two weeks?

No. Dining Plan entitlements (credits) expire at midnight of the day you check out of the applicable resort.
