We have a party of 8 going in May and we're doing the regular DDP. My question is not everyone in our party eats desserts, so is there something we can substatue dessert for? If so what? Does everyone at the table have to sub or just a few? Any help would be great.

When we were on the DDP we were not allowed to sub anything:( but we did enjoy taking it to go.....and CS would alow a fruit;)

I have heard that you can get fruit or bottled water at CS.

At a CS you may be able to substitute a bottle of water or fruit for your dessert. It'd be a one for one deal, so only those that wanted to would have to do it. Others would still be able to get their desserts.
At a TS restaurant you probably would not be able to subsitute anything. Heck, this past Sept I was on the DxDDP. At Chef's de France I wanted two appetizers instead of an appetizer and an entree and they wouldn't even let me do that. They said I had to order from the entree section of the menu. At California Grill I was too full for dessert and so asked for one to go. There was absolutely nothing on the dessert menu that they would pack to go. I asked about several different desserts and was told they would not pack them and that they had a chocolate cake (that was not on the menu) that they usually offered as a to go dessert. I didn't want that and finally asked about maybe taking a cheese plate. This was allowed, but not offered until I specifically asked about it.

A lot depends not just on the restaurant but on who you speak to. Some CM's have been there longer and are more familiar and confident with possible subs and concessions. Others may not be as familiar with changing things up or may have been instructed by management that the specific restaurant policy is xyz. I have had something refused at a CS at my resort in the past, only to be OFFERED the very same by a different CM the next day. Generally they are flexible within reason. Water/fruit is usually okay (assuming they have fruit) but if you don't want to lose the dessert and can't get a sub, just take it to go if they are able to do that.
At TS I've never asked. If we are too full, we just leave it. But if you are wondering about an app or a side as a sub - forget it! There are drawbacks to carrying dessert around the parks for hours on end ....
